Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle. Cap says 2005. Pours hazy amber/gold with a small beige head. Aroma is potent ripe fruit, pears, cherries, raisins, wine-esque notes, a bit of hops, and sweet maltiness. Flavor is very sweet, full of raisins, and the stong fruity notes as well. Finishes very warm from the alcohol and sweet fruits linger. Very interesting beer.

Pours a rich copper with lots of particulate matter. a thin dense white head. Kind of off putting, but the nose is nice. Creamy caramel, alcohol, orange, cloves. Like a creamsickle flavored barleywine, only well done, and not as shitty as that sounds. Well balanced. On the palate this is thick and sticky. a real sipper. Some alcohol burn. A bit of that Belgian funk comes in fairly strong although it’s over a big ass alcohol, orange, and herbal front. This balances some very big sweetness, though the caramel is less so present. Some major diacetyl, but here it works. I mean, this is just a wall of fucking flavor. Maybe a hint of coriander. Deifnitely tangerine peel finish and coriander(?) with alcohol coming on strong in the triple sec aftertaste. Big hops, big malt, big alcohol. quite a brew!

Beer sampled at Cellar’s Wine & Spirits Friday evening beer tasting. Pours an medium amber topped with a thick, quickly disappearing head. Very good lacing. Aroma is of sweet caramel, smoked pork, citrus of lemon peel, and some pine. Taste of sweet and sour malt with a slight raisin aftertaste. More of a barley wine than a Belgian strong ale.

Bottle, 2005 vintage, poured a cloudy pale orange with a nice white head. Very complex aromam, stone fruits, yeast, spice and a bit of earthy hops. very sweet flavor balanced nicely with spicy qualities of the esters and phenols. Excellent mouthfeel, nice a tart with a crisp refreshing qualiy. A very nice beer and I still can’t believe its 12%. You can’t taste it or smell it, but you sure feel it.

Pours nice dark gold color. Looks rather unassuming. Then you smell it and realize what your in for. Taste is huge, so many things going on, light fruit, pears, grape, spice, exotic fruits. Too much to describe. I absolutely love this beer. Amazing big and complex flavor. One of my favorite belgians. I think this is under rated.

This beer poured a peachy/gold color. Very nice. The head also sticks around for a little while, which is great. The beer smelled of fruits, some light summer fruits such as pears, and peaches. The ABV gives a nice bite. What a great beer. It warms you up and this is April 14th. I also live in Georgia so there is no need for the warmth, but I still appreciate the ABV. What a well-rounded beer.

(Bottle @ ’t Brugs Beertje, bottled 2005): Pours a golden fizzy, dark yellow color. Humungeous head, lasting, white. Hoppy grapey bitter aroma, fresh-lots of grape. Coriander, fresh bitng taste, sour, wine-ish. Can taste some of the alcohol, warming. Warming up, a more fruity aroma, fruit punch. Also more fruit punchy taste.
