Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

bottle from Premier Gourmet. Shared with Nice Guy Doug. Was waiting for the right time to enjoy this one. 2am on a Tuesday night with my severly drunken tenant was not what I had in mind. However, really enjoyed this. Surprsied when I read the ABV here. Very smooth, crisp. Expecting a keg of this @ Coles today. wil rerate.

Bottled at Bier Circus, Brussels. Smells like you have entered an enchanted forest. Pine, moss, busy gnomes shuffling around. A barley wine vinous feeling. Rahter easy-drinking but with a seasonal warmth. Some Christmas spices around the edge of this one, but, for once, it does not cover the strength of the beer. Opens up as it warms up. I can see why this has been proclaimed a great beer!

2005 bottle. Pours cloudy amber with a good head that never really went away. Aroma was of fruits, caramel, and a little alcohol. Flavors include fruits, malt, sweetness (caramel, honey?), and alcohol. This beer is full bodied and is very enjoyable to the palate. I am looking forward to tasting this again in a couple of years to see if it ages like I think it may. Right now it is a very good Belgian ale. 2006 bottle: Many of the characteristics of the 2005 are found in the 2006, however the 2006 version is not as well balanced as the previous year. There is more of an alcohol burn and less in terms of the complexity of flavors. I will lay a couple down and try again later.

Pours into a tulip cloudy orange with a monstrous beige head. Nice, fruity aroma. Taste is smooth and fruity with the 12% masked incredibly well. This is quite an exceptional and well balanced beer.

2006 Bottle: Hazy orange colored pour with a never ending head. Sweet, spicy nose with a nice spicy, sweet, malty finish.

Extreme gusher on pouring and apricot color is full of sediment and is completely murky with a totally retained egg white head. Aroma is of honey and pears. Flavor is quite a melody. Flavor is initially lightly sweet and earthy, then sharply spicy and the finish is a bit like candy. This is a very intriguing and enjoyable beer. The mouthfeel is absolutely perfect as if the brewers have achieved a molecular composition of the beer that is found in only the most wonderful Belgian Ales. Delightful.

Reminded me of a carmel apple with alcohol. What an aroma for this masterpiece, apples, honey, that spicey/yeasty smell. This is a great beer, full of flavor that makes your mouth water after taking the first sip. Strong, so you can’t take too many. Very sweet if young, so let some sleep for a while.

Huge pears in the nose, some alcohol. Very drinkable and light for 12%. Nice body, smoothe and crisp palate. Alcohol is hidden exceedingly well. Apple flavor with lighter fruits like pear, grapes. Finishes tart, slightly sour.
