Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Huge pears in the nose, some alcohol. Very drinkable and light for 12%. Nice body, smoothe and crisp palate. Alcohol is hidden exceedingly well. Apple flavor with lighter fruits like pear, grapes. Finishes tart, slightly sour.

Bottle. [Vintage 2006] Incredible thick foamy white head that mostly lasted. Excellent lacing. Body was cloudy with a pale hazy amber hue. Aroma was fruit, caramel, liquorish, yeast, nutty, cinnamon, orange, spicy. Full bodied with a texture with some alcoholic notes to be felt in mouth. Average carbonation. Flavor was moderated sweet, with some bitter hoppy notes to balance it. Slightly sharp alcoholic finish, that lingers in mouth for a long time. Impressive beer, now I want to try the “Stille Nache Reserva 2000 even more”. Unfortunately I am properly not going to be that lucky. Still this was a great encounter and one I am looking forward to redoing soon.

2006 Bottle. Aroma is hops and pears. Very much pears. Some sweetness. Darker fruits, figs and plums, come out as it warms. Extremely hazy dark amber with huge white head. Flavor is fruit, alcohol, some dark malt hints. Sweet but balanced. Complex fruityness- peaches are there along with plums and figs. Very nice creamy but slightly sharp palate. Well balanced and drinkable for the abv.

Amber colour, medium white head. Floral and fruity aroma, orange peels, coriander, apple, alcohol. Orange flavour, sweet, malty coffe finish.

Dark fruits and alcohol dominate the aroma.Pours a very murky brownish orange with no head to speak of.Caramel malts,dark fruits and alcohol stand out in the flavors.Full mouthfeel with a big sweet finish.

11.6oz - 2004 Edition; Large bubbles form a fleeting head over a cloudy, yellow/orange liquid. Starch on the nose, like cooked pasta. Ripping alcohol burn, like a bad Scotch Ale, on the front, and it doesn’t change much after that. Not for me.

sampled at blind "Better Know a Style: Belgian Strong Ale" tasting 07. pours clear amber-orange with small white head. nose is toated nuts, cereal, plum, and hints of bourbon. flavor is pretty sweet, toasted notes, brown sugar, cookie, and not balanced well at all.

Sampled at Issacs . Cloudy orange pour no real head to speak of but there was serious carbonation. Fruity alcohol aroma, possible sour apple/ apricot. Candy/ fruity flavor that is not overly done. A decent brew.
