Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Pours a Hazy peach with a quick qispy white head. Smells of cinnamon, apples, barnyard and cloves. Tastes sticky sweet. Oh yeah! There’s alcohol front and center on this one. A certain winter warmer. Nice and spicy. I wonder how this one is when served at warmer temperatures? This one has a lot of promise with aging. Shame I have to go all the way to Florida to get this beer.

Bottle. A cloudy orange swirl of a pour. Small white head that was quick to depart. No lacing. Aroma of simple surgars, grapes, and citrus. It is an interesting balance of acidity and sweetness. Round fruit flavors combine with the sharpness of citrus, clove and alcohol. It isn’t heavy. It is spicy. It is quite good. (Purchase from John’s in Iowa City)

Bottle. pours a hazy bronze hue with floaties and a small white head that fades quickly. The aroma is complex and citrusy sweet. Notes of pineapple, cloves, leaves, dough, are among the plethora of scents. The mouthfeel is on the lighter side for an ale of this alcohol strength. Plenty of complex citrus notes and a fair level of malty sweetness make up the body. A bit of cloves, honey, coriander, hickory, mostly slightly acidic, spiced flavors are here. This is a pretty good treat, maybe not as dense as I’d like a winter brew to be. Jeez, I’m just nitpicking now. Excellent beer, well done.

Pours with a thin white, creamy head. Cloudy, brown/tan coloring. Aroma of apples, peaches, and white grapes. Sweet flavor of similar fruits, brown sugar, and caramel, with an alcoholic warmth. Spectacular, excellent beer.

Bottle (2005 version) at home - in the glas right now !! It comes with at big head - a very lively beer - really wanted to get out of the bottle.... Unclear amber/ brown - big white head. Aroma: Spicy fruity, yeast, pepper. Taste: Malty, fruity, sweet, yeast, brown sugar, pepper, licorice, and lots more. I think the 12% alcohol just shows in the finish - sharp and slight burning, but still a very nice and pleasant beer !!

Spec Brew 2005. Appearance is hazy orange with a pretty good white head. Aroma of spice, yeast, citrus, fruit, and banana. Very nice flavor of spice, dark fruit, banana, raisin, sweet malt, and fig. Awesome belgian.

Bottle: Hazy orange with a small, fizzy white head. Nose is very fruity and sweet with plenty of citrus. Taste is sweet from fruit, citrus, apple cider?, raison, and caramels. Sweet, yet tart. Syrupy on the way down with a light alcohol presence. Overall I was pleased. Thanks Bert!

NorCal tasting Jan 07 - Wow this was sweet. A fantastic after dinner beer, this can be sipped forever. Definitely not for those who don’t like sweet beers. An aroma of sweet fruits, brown sugar and whiskey. Appearance was burnt orange color and hazy with a huge head. A fantastic mouthfeel full of soft creaminess. Flavors were sweet, sweet and more sweetness! In fact I believe I have found my threshold on how sweet a beer can be before I turn against it. This was it. Strong alcohol taste on the finish. Incredible beer that deftly balances between being almost a perfect beer and a cloying piece of junk.
