Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Wow, where to begin. First of all, big ups to Butters for providing this unique Belgian! Pour is a beautiful hazy gold with white head. Rich sweetness of honey and malts, slight alcohol. Similar taste with a nice spicyness to balance out the sweetness of this beer. Usually not a fan of sweet beer, but this really struck a chord with me!

Bottle from Swolf3, thanks Wolf. Gold pour with a nice white head. Light and fruity, a little dry as well, very nice aroma. A little spicy, more light fruitiness, and some alcohol warmth in the finish. Pretty good.

Pours gold in color with a thin white head. Aroma is honey, berry and alcohol. Very thick mouthfeel, very sweet with some bitter finish and alcohol tingling. Thanks to Butters for this.

2006 bottle. Pours a hazy brownish gold with a huge 4 fingers of fluffy overactive off white head. Aroma is yeasts, candi sugar, malts, fruits, spices. Flavor is sweet candi sugar, dark fruits, yeasts, esthers, spices, the carbonation is very nice. Quite complex and very enjoyable.

[2005 Bottle] from Ygtbsm94, thanks Brad! Pours a hazy gold with a large beige head. Aroma is sweet candi sugar, malt, and fruity yeasty notes. Flavor is definitely showing its age - really mellowed out sweetness, especially off the front end. Super smooth and rich, the alcohol is almost imperceptible. I can’t say that this has improved with age, but it definitely hasn’t declined either. Interesting brew.

Pours a white head with a thick golden body. Smells of honey. Reminds me of mead. Saffron and creamy. note to self...drink this again.

Sampled at the Impromptu Butter’s 6th cellar clearance. Hazy golden orange with suspended particulate and small ring of white head. Nose of honey and just the slightest hint of alcohol. Massively sweet honey flavor is verging on mead. Great hidden abv has a nice warming effect but no burning. Sweet but not cloying. Very enjoyable candi sugar finish. Expensive, but worth the price for a dessert wine substitute.
