Commercial Description:
Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27°Pl), has been boiling for 5 hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops and dry hopping gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10°C and mark the year on the cap with an alcohol marker. Cheers!!

Bottle. Pours a nice amber color. Aroma is filled with yeast,spice,fruit and some caramel. Taste is spicey with some fruity and caramel notes. Fresh apple can be found. Nice warming finish.

not my style but a great work in brewing. aroma and taste of fruit in tea. sweet and delicious with candy properties as well as beer, coriander and banana. different than i would have expected but as good as has been reported. a bit spicy in the Belgian abbey tradition. moderate alcohol feel. really good.

2008 bottle. Cloudy orange-brown with a half finger of dirty white head. Aroma of citrus, dark fruits, caramel, and a musty zest. Taste is caramel with fruits over top and a drying alcohol and spiciness in the finish.

330 mL bottle purchased from McScrooge’s in Knoxville. Poured a clear, dark gold/amber color with a two finger off white head. The aroma was caramel and dark fruits, with molasses and brown sugar notes. The flavor was caramel and molasses, with a spicy finish. Dark fruit was present as well. There was quite a bit of warming on the palate as well. This was a solid brew, and I’m glad to have rated this #900.

A golden colored beer, with a thick foamy white head. The aroma of dark caramel, with dark fruits and apricot with malts. The taste is stimulating and warm. Flavors of caramel, little sweet and some bitter, fruits like citrus and apricot and some spices. The aftertaste is sparkling with some bitter, which stays for a while.

Light amber in color and cloudy. Aroma is of spices, yeast, bread dough, and a little cider vinegar. Taste is yeasty and grainy with a strong alcohol presence.

Bottle @ De Kelk, Bruges. Pors with plentiful blond beige head. Beer itself is blond copper to orange. The aroma is strange, wine gum-like, malty and thera are ripe fruits in it. Maybe dates ond prunes? Maltiness is dominating but some spices and yeast are also present. Tha flavor is is really malty, liquour-like, sweetish and slightly sour in the finish. Fruitiness and malts act together and make this beer quite aromatic. High alcohol content is very well hidden. The palate is full bodied, very smooth and softly carbonated. Great winter warmer.

Bottle from Hamilton’s. Cloudy burnt orange pour with a small off white head. Very sweet and fruity nose with apricot, peaches and some citrus. Sweet malt and caramel as well. Flavor held some yeast, light spice, light hops and is also quite sweet. Finish is long and quite sticky.
