There are 6 different labels and six different versions of this beer. All are similar.

The name refers to a description of the Hieronymus Bosch painting used on the label.


SPOON WHACKER - Released Fall 2004 - (Original Recipe -- 35 IBU’s)
PIG NUN - Released Fall 2004 - (45 IBU’s)
SURLY BIRD - Release Date: May 2005 - (45 IBU’s, extra finishing hops)
PINHEAD - Release Date: Fall 2005 - (50-55 IBU’s)
DEMON FISH - Release Date: August 2006 - (50-55 IBU’s, roasted malts, and lots of Saaz aroma hops)
RAT RIDER - Release Date: TBD - (Recipe undetermined)

Commercial description: Fermented three times with two different yeasts, including a strain of brettanomyces - the "wild yeast" of lambic brewing. Pale golden color with an enormous rocky white head. Brett and spicy aromatic notes, with a malty-juicy note on the palate. Finishes with Brett and dry hop notes. This one is the Flemish Primitive Wild Ale/Pig nun/Fall 2004/45IBU bottle. Pours a slightly hazy golden body with a rocky mountain white head. Yeast and apples dominate the aroma with a hint of lemons. Was hoping for some sourness but oh well. Flavor is pretty much the same. Alcohol is slightly detectable but certainly not overbearing. Got better as the bottle emptied...

Courtesy of Pialhead. Golden, slightly hazy with no head. Initial aroma is sour/tart fruit and flowers. Flavor is exactly like aroma would indicate. Sour/tartness up front with some flowery notes throught the middle and finish. flower like character is more pronounced in flavor. Sort of a hopped up flemish sour. Different but enjoyable.

Pig Nun version rated here but Surly Bird was sampled earlier. First off I should say that this reminds me more of a Flemish Sour than just a typical Strong Ale. Pours a light orange color with a thick and lasting white head. Delightful aroma reminds me of sour peaches, apples, and cherries. Some bready notes as well. Taste is wonderfully tart without being too mouth puckering or sour. Tons of slightly sour fruits and a crisp dry finish. I’m surprised by the alcohol content, I would have guessed that this beer was around 6.5% ABV based on the taste. Fantastic job of masking the alcohol content. I could make this a regular beer.

Pig nun bottle at Mahars. Cloudy gold/copper with a thin white head. Smells grassy and earthy with some cherry and rasberry notes. Taste is moderately grassy with some nice sour elements.

A barnyard musty smell greets you. Nice creamy head and pale colour. The taste must be acquired, and I have had better, such as recently in Vermont. Some lemony citrus. It will surely scare off most beginners. Creamy and drinkable. I think this should be had with a meal. A strong ale? No a wild ale.

This bottled brew poured a large sized head of foamy finely sized mostly lasting white colored bubbles that left behind a good lacing. The body contained soft carbonation, was hazy and yellow brown in color. Its aroma contained notes of sour horseblanket fruity malty . Its mouth feel is initially tingly with a lingering tingly palate and a aftertaste. Its flavor contained malt hop bread yest fruit dry mildly sour notes. An excellent beer that I would buy again.

Pig Nun. Hazy golden coloured ale with a creamy white head. Herbaceus cherries with niice grassy hops in aroma. In mouth, tingly hops and crisp malt with some ground cherries notes. Rich bodied, and alcohol warmth. Enjoyed at YEHa!05 Christmas Party on Dec. 17th, 2005.
