There are 6 different labels and six different versions of this beer. All are similar.

The name refers to a description of the Hieronymus Bosch painting used on the label.


SPOON WHACKER - Released Fall 2004 - (Original Recipe -- 35 IBU’s)
PIG NUN - Released Fall 2004 - (45 IBU’s)
SURLY BIRD - Release Date: May 2005 - (45 IBU’s, extra finishing hops)
PINHEAD - Release Date: Fall 2005 - (50-55 IBU’s)
DEMON FISH - Release Date: August 2006 - (50-55 IBU’s, roasted malts, and lots of Saaz aroma hops)
RAT RIDER - Release Date: TBD - (Recipe undetermined)

Commercial description: Fermented three times with two different yeasts, including a strain of brettanomyces - the "wild yeast" of lambic brewing. Pale golden color with an enormous rocky white head. Brett and spicy aromatic notes, with a malty-juicy note on the palate. Finishes with Brett and dry hop notes. Clouded orange appearance, good head formation. Funky wild yeast aroma. Sweet apple cider, yeasty flavor. Nice brew but lacks the complexity to truly be a real wild child.

Very pale amber appearance, excellent head formation. Swett wild flower aroma with hints of raspberry followed by a mustiness. An acidic puckering sourness runs right through the palate becoming especially strong in the finish. Sweet petals and fruit candy provide some balance. Especially puckering in the aftertaste.

Bottle..from 2003, MJ’s beer of the month club. Poured a nice gold...bubbly (like other raters observed) with a decent sized white head. That aroma was a first for me...more brett in the nose than I ever experienced. Lotsa yeast there in the flavor with some maltiness too. Not too tart...and has a nice triple kick. Different, but that’s a good thing. Will get more someday.

Spoon Whacker: This poured a bright golden body, slightly hazy, with a tall fizzy head that did some splendid lacing. The aroma is sour, crabapples and tart cherries, and slightly yeasty. Light-bodied. It has a sour malt flavor, just a bit of hop bitterness, the tart fruits still present, and a touch of alcohol. The finish is both dry and sour. Very nice. I will be trying the other five versions.

(750ml bottle, Pig Nun label, Fall 2004 vintage) Pours a lightly cloudy orange body with a moderate off-white head. Heavenly sourness (apple) in the aroma with butterscotch and dustiness. Flavor of sour apple, yeast, and earthiness. Somewhat bitter finish.

(bottle) Pours a cloudy yellow with floaties and a small white head. Aroma of yeast, grapefruit, sour apples, and spices. Tart flavor. Nice complexity and balance.

Pig Nun label. Hazy gold. Fleecy yellow. White head. Decides to stick around. Cork is classic flemsih sour. I mean classic. Beer fairs otherwise however. Nose has elements of both lambic and tripel. Exquisite. Round. Sour fruit. Medical tape. golden grains. Overall quite pleasing. Perhaps some bubblegum. Soft peaches. Medical bitterness on the tongue. First a mango buzz of sourness. This settles down into the round fruitiness of the yeast giving it a plasticine quality. Very foreign and exotic. Rounded out by the bitterness of euro-hops. Flavors: Plastic, band-aid, cough syrup malts, mango. Well Done! G-rat

not exactly sure which of the "six different versions" i had. but it was an explosive cork, because before i had untwisted the cage it shot into my hand which had luckily been over the opening just in case something like that happened. this beer is bubble gum meets barnyard, with lots of strange funky sour aromas, but the sweet finish belies the dry tart smell. nice.

A Mes rate: Very similar to a stronger Orval in both flavour and aroma. It’s tangy with an odd salty sourness (if that’s possible). Long creamy finish that turns bitter. Actually the more I smell it the more it smells like an Orval mixed with a lambic. Very strange stuff. Got us oddly drunk too. Fantastic Bosch label!

Pours a clear deep, effervescent golden with a thin, but dense white head with nice light lacing. Aroma is tart, funky and barnyardy but with a substantial earthy maltiness and a touch of spruce. Body starts full, thick, malty and lightly sweet, turning slightly cheesy and bready toward a tart and bitter finish. A very unique beer that seems a bit confused at times. It’s like a cross between a triple and a gueuze, but for some reason it has the bitterness of Orval in the lingering finish. Interesting to say the least, and worth trying, but I just wish it had a touch more sweetness to balance the bitterness in the finish.
