Aroma is sour, tons of cherry, sharp on the nose, alcohol is definitely is there. Flavor is moldy and sour, old and funky, lots of cherries and cereal/grain things going on. Tart aroma of sour cherries, a bit of wood, earth, cheese rind, and must. Sound good? Well, it smelled good. Tart cherry body, but paired with more brie cheese rind and musty, moldy notes, wood, and an addition of bitter hops that cut the sourness to a slight degree. I really tried to pick up other stuff but just couldn’t. Bright red with a thin, white head that fades. Wow, initially sweet with a cherry flavor but then a major sour flavor with lots of acidicy. Bitter enzymes abound in the aroma, not to mention the curt cherry skins, bitter grapefruit pulp, stamped lemons and the overall perfection of the sweet and sour dichotomy. Whap! This is the sour dynamic that I seem to relentlessly pine for as of late. Select green grape skin and turning pomegranate kernels. Souring, dirty little yeast strain and gallivanting tart cherry characteristics envigorate at every turn. Delectable. Someone please let me know if it was you that I have to thank for this! Mouthfeel like champagne, perfect. Nicely balanced acid and tartness, along with sweetnes, fruity flavours and dustyness; excelent made. finishes with a bite, good stuff indeed.
