Flavor is lemon zest, orange spice, and a bit of etoh. only okay though. Rastacouere (5561), Montréal, Quebec, Canada
| 3.9 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 4/5 | 15/20 | Jun 5, 2008 Objectively speaking:
Very pleasant Tripel with wholesome yeast character.
I like:
Really authentic take on the style, yet with its own personality. Brightly hopped. Full carbonation supports the medium body. Biscuity and herbal palate with a zesty tang in the finish. Remarkably hidden alcohol.
I dislike:
A bit overly citric if anything, but this was a lovely ale.

| 3.6 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 7/10 | 4/5 | 14/20 | Jun 4, 2008 2008-05-31. Hazy egg-yolk golden yellow, small white head. (3+) Light floral and spice notes in the aroma, muted malt. Similar flavour, muted floral, zippy lemon note, mild yeast character. Smooth average plus palate. Little or no alcohol is present in the flavour which is impressive. (3+) Pretty pleasant but just a touch too mild and subtle to score higher. Bottle, Mondial, Montreal, 5T?

| 3.7 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 7/10 | 3/5 | 17/20 | Jun 1, 2008 Enjoyed at Mondial 2008. Yeasty aroma, its like a geuze in appearance and carbonation with cloudy yellow and small white head. Above average mouthfeel, some lemon taste. All of this imparts a light bitterness, some candy sugar and otherwise good malting. Lovely on a Summer day. MartinT (5068), Montreal, Quebec, Canada
| 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 3/5 | 8/10 | 4/5 | 15/20 | May 30, 2008 My Bottom Line:
Spicy, citrusy hoppiness swims throughout the humble cereals until a drying herbal hop bitterness clinches this amazingly authentic Belgian-style Tripel.
Further Personal Perceptions:
-A sheet of foam covers the cloudy pale blond.
-The fluffy carbonation is perfectly calculated for the healthily slender body.
-The citrusy spiciness recalls lemongrass.
-Alcohol is not present in the flavor profile. This is very easy drinking.

| 3.9 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 7/10 | 4/5 | 16/20 | Mar 4, 2008 Updated: Jun 3, 2009JoeMcPhee traded me half his glass for half of my Dieu du Ciel Aphrodisiaque... sucker. Color of the beer is golden, cannot see through it yet its glowing and shiny like mother nature smiling down on her children. Aroma is lightly tart, don’t care if this is purposeful but I love it (Joe just did not get it). Then its followed by sweet candi sugar and yeasty dough. Taste is similar but less sweet and less tart. Has more earthy Belgian yeast character. A nice soft mouthfeel with reduced carbonation. Wine glass pour off tap at Spuyten Duyvil. 8/4/7/3/16.
750mL bottle, newest batch. This is different, not a sour brew but an actual tripel. BIGGEST GUSHER EVER! Be careful, of course this makes for a serious head and lacing. Beautiful glowing golden body. Flows like a very authentic tripel, sweet, earthy, dough. Very nice stuff outside of the exploding beer. Good thicker, smooth mouthfeel. 8/4/8/4/16 JoeMcPhee (5010), Jackson Heights, New York, USA
| 3.4 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 7/10 | 3/5 | 13/20 | Mar 3, 2008 Updated: Aug 7, 2008Tap at Spuyten Duyvil. Had a fresh batch, and like virtually every Defiant beer, these guys can brew... they just can’t keep their stuff from getting infected. This batch was newer and so is likely a better representation of what they were going for. Pale straw colour with a thick white head. Aroma is lightly clovey with a kiss of clove and banana. Also a fair bit of lemon and some light black pepper. Warming brings out some apricot and peachy fruitiness. It is quite dry and restrained with a nice crackery Belgian pale malt. It’s pretty clean and I like these with a bit more spice, but it’s not bad at all.
Tap at Spuyten Duyvil. Cloudy golden beer, aroma is quite spicy and lightly fruity. Some orange, lemon and apricot plus a fairly light tartness. Flavour shows some sweet fruity character, but also a lot of lactic/citric tartness. Belgian maltiness, but the sourness in here doesn’t really work for me.

| 3.3 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 3/5 | 7/10 | 3/5 | 14/20 | Mar 2, 2008 Interesting triple, sour like an unfiltered llambic. Orange color, miniman lacing and head. Orange notes. Could have benefited from stronger carbonation. On tap at the sputin devil in brooklyn
