Commercial Description:
This beer style was created in the late 1990’s by some breweries on the west coast of the United States, and most notably by Rogue. It’s an extreme version of the American IPA. It’s a beer with strong amber hues and dominating hop flavours and tastes. It is however well balanced through the presence of a combination of malts. This beer is usually dry hopped, a tradition that is adhered to by Dieu du Ciel!. The bouquet of the beer consists of floral hops. In the mouth, the bitterness is quite strong, without being extreme, and the alcohol makes its presence known, without being domineering. The aftertaste is dry and less syrupy than a barley wine. Thus, it is a very complex and bitter beer, but always well balanced.

9mo aged cask at the brewpub, DDC 9th anniversary Appearance: Hazy blonde with orange highlights. Aroma: Low aroma at first but as it warms there is some grassy hop and hay aromas. Flavour: With the hop flavour more subdued from aging, the grassy hop character and crystal malts become dominant. The bitterness is still good but no longer has the resinous bitterness of the fresher beers. Mouthfeel: Medium bodied smooth carbonation. Overall: Stands up to aging very well stlll pleasant beer but quite different than the fresher versions. More subdued in terms of hop flavours and aromas but it’s still bitter like a cranky old man!

9mo aged cask at the brewpub, DDC 9th anniversary. Golden amber colour. Extremely flavourful. Very hoppy, but surprisingly smooth. Quite bitter, as it should be. The finish isn’t nearly as bitter as I expected. If the chalkboard hadn’t listed this as 8.5% I would never have noticed. Quite possibly the best beer I’ve ever tasted. Also had the 2yr bottled version, but it wasn’t quite as good - a bit too mellow for my tastes.

On tap at the brewpub, visited June 23 2007 with a big group of friends (no fellow rateberrieans though). Slightly hazy orange amber with a foamy cream-coloured head displaying excellent retention and lace. Big aromas of tropical fruit, grapefruit, and resinous pine. Same flavours on the palate with a thin underlying malt structure and alcoholic warmth that isn’t harsh. Smooth and medium-to-full-bodied. Moderately bitter finish. I liked the regular IPA better.

On Tap at Mondiale ’07. Nice golden/dark orange color. Aroma is lots of hops, and big citrus notes. flavour is very floral, and hoppy, the citrus really lingers, alcohol is very very well hidden, but the bittnerness is lacking very much.

Robe dorée aux reflets cuivrés surmontée d’une mousse blanche qui s’estompe. Arômes de houblon amérisant et de malt caramélisé. Saveurs de houblon amérisant résineux et de malt caramel.

Pale honey color. Aroma of parmesan cheese. Notes of dried apricot, Good bitterness, alcohol is well hiden.

[Snifter(s) @ the brewpub, 9%] Pours a dark copper color with the usual dense, standard DDC head. Surprisingly mellow citrus aroma, with some yeast and subtle fruits. Flavors are citrusy C-hops all the way. Comparable to many American-style IIPAs, Chaman has a more earthy, complex hop profile, with a warming alcohol finish. Overall, I really enjoyed this brew. Excellent.

Veyr heavy, with a bitter taste and good foam. COpper coloured but dark. Somewhat tiring. BUT nice to drink.
