Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

Bottled at Bishop’s Arms Vasagatan, Stockholm. Clear golden, rich airy firm head. Floral buckwheat aroma, pineaple andlychee. Sweetish and fruity with marzipan yeastyness. edium bodied with, well rounded mouthfeel. Drier finish. Aromatic orangey hops and Beögian style yeast character. Marked but unassaulting bitteress. A well made, interesting beer.

Has a very sweet smell which i find a little unpleasant. Taste is full, with notes of perfume and flowers, which is a trend i’m noticing with alot of Dieu du Ciel’s beers. Not a bad thing mind, its very refreshing and pretty. I could not really call this an abbey style beer however, although it has a nice spiciness on the nose, its missing alot of the fruit and licorice notes common with this style of beer.

Bottle form Beer Store. Hazy dark yellow with a fizzy white head. Pleasant floral aroma of pear, nectar, and orange. Flowery taste with fruit notes and a nice hoppy dryness and ending with a tremendous complexity.

Pours a hazy gold, nice head. Aroma is fantastic, loads of Belgian yeast, some spiciness, and a good floral note. Flavor is a match, with plenty of light pale malts in the mix as well. Hops are evident, but mostly add an earthy and floral character that blends seamlessly with the yeast notes. The only drawback I could find was that the alcohol was evident in the flavor. But really, an outstandingly well done beer.

Slightly hazy golden with a lasting white head. Great yeasty aroma, with tropical fruits and complex spices, flowers and a little malt note. Dry and spicy flavour with grassy hops and a nice bitter finish. Pretty much the perfect Belgian blonde ale

Draught @ Bar Volo, Toronto, ON: Pours very light yellow, decent white head. Aroma is floral and soapy from hops, some citrus fruit and white pepper. Taste is quite bitter and astringent, spicy and just a little sweet. I actually found this one to be overrated but I offer kudos for hiding that extra alcohol, never would have pegged this for a 6.5.

Straw coloured with a bit of hazyness and a nice white head.Really nice sweetness, on the fruity side of things with some complexity but slightly less than a triple with a nice lower ABV. Really enjoyed this.

Immediate gorgeous blooming of sweetly fresh & aromatic hops is the main feature. Lots of rounded piney and poeachy hop flavors, rounded citrus, Absolutely smooth on draft, with a fairly full feel and perfectly balanced fruit. and malt sweetness. Grassy and spicy esp on finish, wonderful from A to Z. My favorite aspects of IPA and Tripel on a finely integrated beer.
