Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

11.5oz bottle. Poured a deeper and cloudy yellow color with huge sized (5 finger) white head. Aromas of bananas, spices (lots of pepper), and yeast. Tastes of spices (lots of pepper again), fruity, some citrus, and yeast. Some lacing left on the glass.

Bottle from trip to Montreal. Slightly hazy golden with a large white head that leaves some beautiful lacing. Aroma is fantastic, big and fruity (esp. apricot), some sweet and spicy notes, good yeast character, and floral & tea-like hop notes. Full mouthfeel, a bit creamy. Flavour starts like a typical solid Belgian golden ale - yeast, fruit, a but of spice - but then the hops kick in and take it to the next level with lingering notes of orange zest. Excellent stuff!

12 oz bottle. Pours a hazy golden with orange notes and a larger foamy/bubbly white head that left sticky lacing. Aroma of of pepper, lemon, orange peel, Belgian yeast, spicy, candi sugar, floral, fruity, and a nice hop touch. Flavor was more of the up front black pepper, Belgian yeast spiciness, some tropical fruits, orange, bready, candi sugar, nice and dry. Well done.

Pours a slightly hazy yellow gold with a frosty medium sized white head. Nice lacing. Aroma of black pepper, zesty orange, yeast and sugar spice. Taste is peppery with hints of of light candied sugar, zesty orange and yeast. Nice.

Bottle. Pours turbid dull golden with orangy edges and 2 fingers of fluffy, white head. Aroma is rock sugary malt, floral spice, mild yeasty funk, orange zest, and black pepper. THe taste is very black peppery, with a solid dose of orange zest, rock sugary malt, and floral yeast. Finishes bone dry, and the complexity of flavor never diminishes. This one is outstanding.

clear golden pour, good amount of white head. Great aroma if hops, belgian yeast, and citrus with a touch of banana. Flavour is very fruity, lots of citrus from the hops, and a touch of spice. Insanely drinkable, just a top notch amazing belgian ale!

Huge, very dense & fine, just-yellowish head over hazy golden beer with an orange to amberish shine; well-carbonated. Quite hoppy nose, C-hops, but not as overpowering as from an APA or IPA. Clearly dry-hopped, with a bit of ureum, and some citruspeel aromas. Nice. Very dry & hoppy flavour, in the taste noble UK hops, rather than C-one. Gently, nice crystal malt and toasted notes, lightly sweetish creep in, counterweighed by a citrussy fruitiness. Very balanced. Medium bodied & very slick, discreet alcohol warming. This kind of hoppiness will take another decennium to be called Belgian, I fear. In the mean time, the beer is beyond reproach. Grand merci, Sylvain!

(Bottle) Pours a hazy golden-amber with a large rocky creamy off-white head. Aroma of herbs, plastic, mango, dried Turkish apricots, passion fruit, and biscuit. Flavor of toasted oats, floral, pear, herbs, apple, and orange peel. Nicely crafted and quite complex.
