Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

12oz bottle...pours a cloudy, opaque golden yellow color with a thick white foamy head. Leaves nice lacing on the glass. Head is quite large then receeds to about a finger. nose is lovely, sweet but somewhat floral notes, a light ricey kind of graininess in the nose as well. Palate is full and thick with a very nice velvet/fluffyness about it, but not airy. fairly flat for the amount of bubbles that race through the beer. Flavor is grainy with some light sweetness but it really is quite dry. Some spiciness as well.

Bottle. Clear amber pour with a tall, sturdy white head. Aroma is very floral and spicy with dried fruit notes, candy, yeast and perfume. Taste is big yeast notes, dusty malts, big flower notes, perfume, candy, fruit, peppery spices and bitter hops. Body is light and very bubbly. Lots of carbonation to this. Very dry overall. Ends with more spices, fresh cut flowers, bitter hops, Belgian yeast notes, light honey, perfume, dried fruit, dusty malt, and herbal notes.

Bottle. Nice golden pour with a thin white head. Sweet candy yeast with spice in the nose. Pepper and hops at the forefront with a nice Belgian yeast undertone, finishes a bit tart. Smooth body with good carbonation. Nice beer.

Pours hazy dark amber with a large off-white head. The aroma has mildly toasted malt, estery, some spice and earthy yeast - also quite dry for the style. Medium smooth body with a bit of graininess and some sharp carbonation. The flavor starts off quite spicy with black pepper, some malt, Belgian yeast and continues with the dryness aspect. The finish has lots of phenolic spice coming into the mix. Enjoyable beer.

Bouteille: Poivre, citron, levure, pêches, houblon, mangue, tangerine; caractère rustique de la ferme et de la saison des foins; meringue; robe jaune orangée opaque; une bière extraordinaire!

En fût: Une bière extraordinaire encore une fois mais qui, à mon avis, perd un peu de sa splendide (et néanmoins accessible) sauvagerie... ?

Pours a bright golden orange with a one finger white head. Beautiful in a glass. The nose is very spicy and fruity, estery, mildly sweet, citrus rind. Flavor is yeasty, peachy, spicy waxy hop presence, orange/citrus rind. Palate is spicy and nicely carbonated.

Bottle. Pours golden, white head. Mild hop aroma, light notes of honey, orange. Flavor is simple and good. Very mild, delicate pale malt sweetness, followed by citrus hop flavors that build into an intense finish. Hopiness lingers. Balanced with some nuance. The more I drink, the more I absolutely love. Excellent.

11.5 oz bottle. Pours hazy deep golden in color. Aroma spicy, banana and bready. Taste sweet, spicy and citrus with bitter and dry finish.
