Commercial Description:
Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

12 oz. Bright, clean, golden color. Prominent and forceful head. Nose of sweet honey, hops, and some spicy element, white pepper maybe. Palate is decent, flavor drops off a bit on the finish. Golden-esque but with more hop character. Nice hybrid of styles Smells like Chanterelle Mushrooms! Apricots and earth!

12oz bottle. Pours a bright gold and a big lacy head of tight white bubbles. Aroma is actually more like an APA or sweet IPA. The flavors have some elements of an abbey ale, sweet and mildly spiced but the hop character really cover it up. I’m kinda confused by this conflicting characters of this beer.

cloudy gold with thick off white head. faint fresh flower aroma a little fruit. slightly sweet flavor with a little citruis and pine hops.

Hazy yellow-orange with thick cream colored head. Aroma is floral, fruity, with a hint of hops. Lots of small bubbles make it very fizzy feeling. Light malt flavor with solid hop finish.

Bottle. Pours a hazy, light orange, very thick, slightly off-white head. Aroma is very subtle, sweet malt. Flavor is sweet malt and some sublte fruit notes, maybe some spices in the background.

12oz bottle shared by Dogbrick. Cloudy gold pour with a big white head. Sweet malt aroma that is very yeasty and slightly tart. Peppery flavor with some sweet malt and some unexpected hops in the finish. Pretty dang good for a Belgian.

Pours a hazy golden yellow with loads of floating sediment. Thick creamy white head. Aroma is of tangerines, spice, pine, bread, oranges, banana on the nose. Tastes like a fusion of an IPA and a triple. Very hoppy, some high alpha PNW hops were used in this brew. Tangerine, grapefruit, oranges and lemons, pine and resin, spice (lots of spice), hints of banana and bubblegum close to the finish and a nice dry hoppy finish. Palate is lively, light fine bubbles. Nice beer. Really like this brewery!

Cloudy gold with tons of sediment and a half-inch white head. Sharp, fruity nose. Flavor is sweet fruit with a dash of grapefruity hop bitterness. Notes of wood and earth. Nice body and good lacing. High carbonation and a tangy, dry finish. Nice.
