Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Pours a hazy dark orange, with off-white head. Very malty barleywine; caramel, bread, earthiness, slightly roasty, and finishes with some bitter floral hops. Rich flavor and full mouthfeel. honestly I didn’t think it was that tasty though, still good beer.

Bottle @ City Beer San Francisco 2009. Average fizzy white head that mostly lasted. Fair display of lacework. Dark amber cloudy color. Aroma of bread, toasted malt, caramel and quite nice hoppy floral and citrus notes as well. Full bodied with a soft carbonation and light alcoholic thick texture. Moderated sweet and bitter flavor. Light lingering floral hoppy and malty finish.

2009-06-06. Dark brown body with a good sized beige head. (4+) Rich malty aroma, caramel malt. (7+) Flavour has similar rich malt, lightly warming alcohol adds a different note to it. The alcohol is noticeable but not at all rough. Sweet caramel, mild earthy touches. (8+) Medium palate is nice and suits the beer. Really good, very drinkable. I had been looking forward to trying this. A vintage bottle was icing on the cake! Enjoyable beer that I had been looking forward to. July 2007 Vintage. Bottle at the brewpub, Montreal

Pours amber with an off white head. Lots of sweet malt, hops, and alcohol in the nose. Flavor is rich and malty, ripe fruits, a hint of smoke, and tingling alcohol warmth.

Bottle. Thank you Andersand. Pours dark amber with a small white head and lacings. Lots of dark matls. Sweet, a bit roast, vinous, fruits, smooth, caramel, toffee and a bit of alcohol. Very fine.

Bottle = 9.8%abv. – A crimson amber body, short off white head. The aroma is massively malty, a bit hit with alcohol, plums, dates, bing cherries, blackberry. Flavor accentuates light edges of smoke, molasses, and toffee sweetness. Palate is sticky, and that full-size abv does not try to hide from the senses. Nice Barleywine… I need this just before bed!

Bottled. Poured rich, plummy amber with a short, but well-retained cap of off-white head. The aroma was much brighter than expected with juniper berries, lighter fruit, and definite warmth over aged caramel, biscuits, brown sugar, and burnt molasses.. the hops and spices (?) kept it very interesting. The flavor opened with tangy floral bitterness and a hint of red apple, opening into rich dark fruits (including raisins), blackstrap molasses, and caramel at the core.. finished with more floral and some earthy bitterness and juniper over aged maltage.. alcohol warmed it up nicely. Heavier-bodied with moderate rolling carbonation on the palate, balanced well against the brighter notes.. stuck well on the long, enjoyable finish. Excellent brew!

Bottle. Pours a dark cherry color with a some fizzy khaki head. Fruity nose with a bit of biscuit malt nose. There’s some earthy hops there as well. The flavor is warm burnt candy with a lingering bitterness and earthy finish. Warm alcohol. Substantial body. Fair.
