Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Source: 12 oz bottle purchased from Friar Tuck’s in Bloomington.
Appearance: Poured a cloudy amber/red color with a paper thin tan head.
Aroma: Sweet malt, brown sugar, raisins, alcohol and plums.
Flavor: Very fruity. Dark fruits dominate, with brown sugar and sweet malt present. Very biting alcohol finish.
Palate: Medium/full body with soft carbonation and a heavy mouthfeel.
Overall: This was ok. Nothing seemed to go well together and just didn’t mesh in my mouth at all.

When I think about a barley wine, this is what it looks like, even though most do not. Murky brown with a slight red shade and a tan head. Demure nose reminiscent of an abbey quadrupel, plum, apricot, fresh hops. Broad and sticky on the palate, decent acidity, very light carbonation. Massive flavors with lots of depth. Burnt orange peel, toffee, fennel, eucalyptus, clove, on and on. Very biting hops at the end balance the nearly sticky sweetness. This gentlemen, is bad-ass. Greatly underrated in it’s category.

Bottle into snifter. Pours a cloudy, dark brown with a one finger tan head with great retention. Insane lacing. Aroma of brown sugar, caramel, chocolate-covered strawberries, black cherries, spiced rum. Taste is rum raisin, chocolate covered strawberries, spicy alcohol. Medium body. Very dry aftertaste. Excellent.

Appearance: clear dark blood red, fine off white head, streaks of drippy lace
Aroma: sweet dark caramel aroma, lots of balancing earthyness, light fruityness
Flavor: sweet malt flavor, nice fruity character, well balanced earthyness, touch of sharp spicyness, peppery alcohol, long bitter finish

Headless, apparently still brown, and mostly opaque. Aroma is sweet with citrus hop notes. Taste is much as it smells, with a high degree of resinous hop character mitigated by substantial residual sweetness. Pithy bitterness lingers on the palate. $4/11.2oz

Deep woodsy color, rich dark chestnut. Aroma is of old wet malt. Seems mild. Dark caramel up front, quickly replaced by increasing heat. I get a lot of pale malt, but not a lot of other subtleties. There’s some dry oak surrounding everything.

Bottle from Liquid Solutions. Brew pours a Deep brown with a faint red hue. Nose of various fruits (apples, pears, maybe dried peaches?) Light booze and sweet malts as well. Flavor was also sweet malts and a tad boozy. Brew was definitely different, pretty good.

Pours deep brown/translucent amber with thin lacing head. Smells of raisins and alcohol with some fruity esters. It has very smooth bottle fermented carb and is very smooth for style and abv. It is dry for a BW and has alcohol notes with hints of cinnamon. An interesting beverage, and I am going to say it’s worth a try.
