Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Bottle brought back from Portland. A pretty nice looking dirty brownish/read. A medium sized dark tan head. Aroma was very nice; with some sweet and dark fruit, caramel, toffee and a touch of earth. Flavor wasn’t as sweet, and the alcohol was a bit stronger than I expected. Wasn’t in love with the palate; in fact it wasn’t great. A bit of creaminess with some harshness. Some decent flavor there; caramel, fruit, toffee and earth. Some peppery hopping in the finish. Expected more.

11.5oz bottle served in a snifter. Syrupy, ruddy brown pour with no head. Just a few lingering bubbles. Some oily legs. The aroma included layers of fruit. Dark fruit, honeycrisp apples, fresh orchard fruit, and sweet toffee. Very bright and floral. The flavor was dark fruit, caramel, some underlying chocolate, mild citrus, and some alcohol. The alcohol left a sustained warmth at the finish. The mouthfeel was thick and full-bodied with a slight stickiness. A fantastic aroma followed by a pretty decent flavor. A nice sipper.

Pours a murky darkish brown, with a small off white head. Smells of rich dark sweet malt, toffe, dark fruits, and caramel. The flavor was much of the same. Pretty intense alcool presence most of the way. Bready yeast, dark malt and sweet brown sugar come to mind. Some toffee flavors come through in the finish as well. Pretty standard, but tasty barley wine.

Bottle from Glouglouburp. Thanks Dany! Color of fresh pressed apple cider, little to no head. Taste of tropical fruits, cherries, some earthyness with a slightly bitter hop finish that rounded things out nicely. Very good.

Pours dark caramel color with off white head. Aromas of sweet malt, fruit, caramel and some alcohol. Similar flavors with a slight hoppiness in the finish. Full body with mild carbonation.

bottle. unable to find a date but i bought it today. clear brownish red under a small beige head. sweet candy malt aroma with hops, basement mildew, and the slightest hint of alcohol. flavor is nutty, woody, basement, hops, dry, walnuts. incredibly smooth and slightly warming. the palate is simply amazing. i like this because of the mellowness of the hops. sips easy.

2008 Vintage; tasted March 23, 2009. Canada Rating #50. Dark, murky brown color with no head. Very light aroma of sweet malt and brown sugar. Quite non-aromatic. Plenty of flavor, however. A strong, sweet malt hit up front, turning into a light brown or turbinado sugar taste. Some raisins and a vinous note. Resiny and piney hops with a dry grain finish. Medium body. Solid. Ageing one for the next solstice.

Bottle. Pours red brown with a beige head. Sweet aroma of fleshy fruity, caramel, hops, and a hint of booze. The flavor has sweet malts, caramel, and lingering floral hops. Pretty good.
