Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Pours deep mahogany into a snifter. Beige head with good retention leaves tiger lacing as it recedes to hug rim. Burnt molasses aromas. Thick and spicy. Oranges, kirsch, cloves, tobacco and bitter molasses. Lasting alcohol burn.

Very dark cherry wood color with a moderate vanilla colored head. Aromas of old wood, spices, caramel, dates, and cocoa. A nice enough sniff, just does not seem like a lot of meat. Quite smooth and medium bodied. Starts with light sweet malt and moved to dark fruit and rich caramel. Finish gets a bit acidic and bitter. Some citric fruit rind and pith take over and disrupt things. Linger sooths thing back out with some dark fruit and a herbal component. Only a hint of warming. A strong ale, with a few rougher edges.

A warming nice winterbeer, Taste is nutty with lots of hops and a slight hint of alcohol. Smooth and warming with a really good pallate.

Dark, ruby pour with a huge, rocky, off-white head. Dark fruit aroma, with pine, toffee, and damp wood. The flavor is quite spicy and peppery with some notes of wet wood, dark fruit, toffee, and a lasting juniper like bitter finish. The alcohol is not very hidden at all. Oily-medium full body with very soft carbonation. This is much more like a well hopped American barley wine than the sweet English style I was expecting.

bottle poured into a snifter. very nice and complex barley wine... pours a deep red with a touch of an off white head... aromas of sugar, light fruit and a touch of hops. the light fruits really come forward over the front and top of the palate.... lots of apple, plum and banana. it is somewhat light and soft on top while the sides carry a more dense body with a caramel malt character. the hops really shine through the finish... along with a splash of alcohol and more sugar. d’Hiver is a top notch barley wine that stands out from the ordinary crowd.

Bottle brought back from Portland. A pretty nice looking dirty brownish/read. A medium sized dark tan head. Aroma was very nice; with some sweet and dark fruit, caramel, toffee and a touch of earth. Flavor wasn’t as sweet, and the alcohol was a bit stronger than I expected. Wasn’t in love with the palate; in fact it wasn’t great. A bit of creaminess with some harshness. Some decent flavor there; caramel, fruit, toffee and earth. Some peppery hopping in the finish. Expected more.

11.5oz bottle served in a snifter. Syrupy, ruddy brown pour with no head. Just a few lingering bubbles. Some oily legs. The aroma included layers of fruit. Dark fruit, honeycrisp apples, fresh orchard fruit, and sweet toffee. Very bright and floral. The flavor was dark fruit, caramel, some underlying chocolate, mild citrus, and some alcohol. The alcohol left a sustained warmth at the finish. The mouthfeel was thick and full-bodied with a slight stickiness. A fantastic aroma followed by a pretty decent flavor. A nice sipper.

Pours a murky darkish brown, with a small off white head. Smells of rich dark sweet malt, toffe, dark fruits, and caramel. The flavor was much of the same. Pretty intense alcool presence most of the way. Bready yeast, dark malt and sweet brown sugar come to mind. Some toffee flavors come through in the finish as well. Pretty standard, but tasty barley wine.
