Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Bottle. Dark muddy brown pour, with almost no head. Aroma is very sweet dark fruit, dates, and some peppery alcohol. Flavor is the same, rich full body. Vanilla and rich alcohol flavors are nice, sweet caramel, good amount of hops in the finish give it crisp bitterness.

Bottle from Dr. Capone, Ph.D. of Beer. Pours turbid brown with 2-finger creamy, uniform tan head. Nose is malty, with blueberry, elderberry, rock sugar, earthy peaty malt, brown sugar, spirits. Tastes malty, earthy, oaky, hoppy, with nuts, cinnamon, vanilla, whiskey, berries, port, hops, cognac, black pepper, bacon. Palate is very unique, very balanced, and mind-bendingly complex. I consider this a winter warmer, but whether you call it a winter warmer or a barleywine (and it is not a barleywine), this is one of the top 50 beers I have ever quaffed! Outstanding, brother!

Pours what seems to be deep brown, but held to the light turns beautiful garnet red with a thin film of a cream colored head. The nose is molasses, toffee and caramel. The flavor is that plus some dried fruit and a spicy hop finish and a substantial, lingering bitterness.

Bottle at Spuyten Duyvil - thanks to PilsnerPeter for sharing this one - dark amber beer - the aroma is a little indistinct, just some doughy character, cherries, some herbal hops - inviting enough, though - quite british in flavor at first, with a lot of dark fruit flavors - but it builds up a very strong, very american hop profile after that, remaining quite bitter for the remainder - gets some sticky sweet malt on the back end - an interesting mix of the american and british styles of barleywine, but the hops need some time to mellow out.

12oz bottle from BOTW. Pours a very deep brown. At first look its almost black. The head is just swirls of white cream. Aroma is sweet, rich and just a touch alcoholic. A little chocolate and some fruit. Flavor is much the same. The alcohol becomes more prominent - disappointingly so.

11.5oz bottle @Tampa Wkly Gathering–pours a tan head and cloudy orange/brown color. Aroma is somewhat sweet medium malt-caramel, herbal hops. Taste is somewhat sweet medium malt-caramel, alcohol cuts in then herbal hops takes over. Not my taste.

Poured a very deep amber-brown color with a small beige head. The aroma is light but has nice notes of sugar and fruit. Fruit malt has a nice taste to it. Cherry and pear. Mildly bitter finish. Full bodied. It isn’t in your face which I usually like best but this is nice. The only complaint I have is that the malt isn’t carrying the hop finish. Maybe a little time on this and...I need to get some to store.

Dark brown color with reddish highlights. Aroma of molasses,apples, maple, and caramel. Flavor of molasses, dark fruit, caramel and some alcohol. Very well balanced for the style.
