Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Poured a very deep amber-brown color with a small beige head. The aroma is light but has nice notes of sugar and fruit. Fruit malt has a nice taste to it. Cherry and pear. Mildly bitter finish. Full bodied. It isn’t in your face which I usually like best but this is nice. The only complaint I have is that the malt isn’t carrying the hop finish. Maybe a little time on this and...I need to get some to store.

Dark brown color with reddish highlights. Aroma of molasses,apples, maple, and caramel. Flavor of molasses, dark fruit, caramel and some alcohol. Very well balanced for the style.

Bottle from Knightly Spirits. Brown pour with some red highlights. A very, very small whitish head and for sporatic bubbles. Aroma has notes of brown sugar, honey, apple juice, and the hops are noticeable only slightly. Flavor has more hop bitterness than I would have expected. Some notes of honey, brown sugar, alcohol and caramel. The only thing lacking is the carbontion...it was fairly flat.

Deep ruby color with a light white head. Sweet, hoppy aroma with apples, cherries, other fruit, esters,. Flavor is sweet with a bitter hoppy finish. No alcohol detectable. This is a nice, badass barleywine.

Pours cola brown with a slight off-white head. Nose is lots of sweet malt, maple, phenol, apple, and lots of caramel sweetness. Flavor is sweet malt, caramel, apple, and a good deal of noticeable sweetness before the hops come in and do the clean-up hitting. Nice, but some difference between nose and flavor. Good beer.

Balance and a wonderful hop finish. You’d swear that there were cherries in here at times. One of the best barley wines ever. It’s a dark blackish pour with a moderate head. Lovely carbonation and a fruity, estery aroma, but it’s the mouth feel and finish that grab you. Alcohol is well hidden. wit nice malt-sugar to hop balance. Again, what a finish. I bought all 7 at my local purveyor. Wish he’d get more. Fine effort.

Bottle from Papago. Pours the color of dates with a ring of beige foam and mild carbonation. Begins with the aroma of creamy malts and brown sugar. Tastes of rich caramel and rum. The flavor doesn’t come close to balancing the wallop of this brew’s alcohol content.

Bottle poured into a snifer, small head. Dark red in color. Aroma is brown sugar, roasted malts. Fruity/alcohol aroma as well. The taste is a sweet caramel, roasted malts, light touch of fruits. A small amount of bittering hops and alcohol in the end. Overall taste is sweet but not to sugary..Texture and carbonation level are average. Decent BW. Overall, a unique barleywine. Thanks robert for sharing this one earlier...
