Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

This was an incredibly easy drinking Barley Wine. Pours a dark brown with a thin tan head. Aroma of dark fruit, a little hops, and a lot of malt. It was actually very sweet with a lot of malt. It almost had a little bit of a smoke flavor to it as well. Good beer. I have yet to be disappointed by Dieu du Ciel.

[Bottle, 9.8 % alc.] Pours dark copper brown with a large head. Hoppy aroma with notes of liquorice and dried fruits. Rich mouth feel. Dry, hoppy, piney, long and very bittter flavour. Alcohol is well hidden.

341 ml bottle from Systembolaget. Labelled 9.8% ABV. On January 16, 2009. Hazy dark copper to red color, medium tan ehad. Milky, fresh, alcohol, spicy scent. Also dried fruits. Hoppy, bitter, spicy, alcohol, dry taste. Full mouthfeel. Lasting spicy aftertaste. High bitterness.

12oz bonus from my main man Todd, thanks hannont, you rock. Poured the whole bottle into my DFH Snifter. It pours a thick rich reddish copper with a nice tan head. The nose is very nice, with rich fruit and sweet crisp caramel and toffee. Taste is sweet rich and incredibly hoppy, way more hoppy than I expected. There is a huge disparity between the nose and the body. This is a beer where the barleywine imperial IPA thing come together. I like the look and the nose more than the taste, strange contradictions exist in this beer.

bottle thanks to bu11zeye. deep brown pour with a thin cream head. nose of alcohol, molasses, sweet malts and caramel. nice flavor of hops and caramel. bitter finish that’s actually quite smooth but, this beer could use some time cellared.

Bottle. Pours a lightly hazy brown color with a brief thin light tan head. Sweet earthy aromas of raisin, dried fig, royal jelly. Taste has an initial blast of alcohol and earthy hops, surprisingly strong on both accounts. The hops take over the finish. A bit brash, will probably buy another to lay down for a year and see what happens.

11.5 oz bottle. Pours mostly clear, dark copper brown in color. A foamy, beige colored head leaves wispy, sticky swaths of lacing on the glass. Aromas include brown sugar, caramel, dry cocoa, stewed figs and raisins, and notes of vanilla vodka. Hints of molasses shows on a deep inhalation. Flavors show the same malty elements, sweet brown sugar and molasses showing strongest, with a boozy vodka note and a surprising dose of citrus hops. Some sharp, earthen spices come through on the finish. Most of the body comes from the syrupy, sugary sweetness, it seems, while the staunch hops and the warm alcohol make their presence felt on the lingering finish. This one is pretty nice, but perhaps a bit young. It reminds me of Bigfoot with about 2 years on it.
