Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Bottle. Small smooth beige head with a lasting retention, hazy reddish brown body, one ring of lacing, and very little carbonation. The aroma was malty, caramel, some burntness, sweet, lightly hoppy, alcohol, and lightly fruity. Ditto for the flavor along with bitterness. The mouthfeel was very tingly and this is a medium bodied beer. A warming sensation kicked in as this beer warmed, worthy of a try even though there are better of this style IMO.

Sampled 10/7/2009. This Barley wine pours a medium brown color from a 11.5oz (340ml) bottle. Small sized white foamy head. The aroma is caramel, nutty and sweet. A medium bodied English Style Barley Wine. The malts are caramel, fruity and sweet. The hops are earthy. It a touch boozy, but that might be more to the minimal carbonation. Nice balance. Subtle flavors. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly bitter.

Pours a dark golden brown, with off white creamy head, mostly diminishing, good lacing. The aroma is sweet malts, some hoppiness, toffee and caramel smells. The initial flavor is creamy, sweet with some bitter bite, honey, toffee and brown sugar flavor.

Draught at Volo. Dark amber in colour. No head. Raisin aroma with cocoa, prune, plenty of hops. Body is medium with a slightly oily mouthfeel. In the flavour there is dark fruit, cinnamon, alcohol, dark chocolate, cocoa. Hop presence is substantial. Finishes with long, lingering raisin.

12oz bottle in Seattle. This was a very drinkable barley wine in a style I like. Maybe a little more alcohol aroma and flavour than expected with "only" 9 ABV. This really got great as it warmed.

Nice looking! Soft feel and mid to very full palate, oodles of layers of toffee and fruits - apple, fig and pear, grassy hop, warming alcohol adds body yet I can hardly taste it. A subtle blending of big flavors, smoothed out in uncanny drinkablility - DDC’s trademark. Probably need to drink a number of times to fully appreciate.

12 oz bottle. Pours a slightly hazy dark amber to copper body with a nice one finger tight bubbled beige head that had amazing retention. Very nice deep caramel and toffee malt nose with a nice resiny and piney hoppiness, a bit of vanilla. Very rich and soft smelling. Rather bitter, it almost reminds me a bit of really well aged Old Crusty after it’s edges are smoothed out. Lots of toffee and caramel under all those hops keeping it very solid and drinkable. Finishes really well balanced between the sweetness and hops The mouthfeel is soft and smooth with a nice creamy texture and zero alcohol presence at all. This is pretty delicious, I’ve pretty well liked those that I have had from these guys.

At Volo on tap- A deep mahogany, with spotty lace and a beige frothy cap. Caramel aromas with toffee, earthy piney hops, stewed prunes and other pit fruits. Sweet caramel and deep rooted fruit flavours, some treacle, piney grapefruity hops, floral, with some vanilla. AN excellent balance has been acheived with this BW. Very drinkable and very soft for its weight.
