Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Draft at Stockholm Beer Festival 2007. An amber beer with a thick tan head. The aroma has notes of spices, caramel, and malt. The flavor is sweet malty iwth strong notes of caramel as well as notes of alcohol and fruit. The body is thick.

Bottle 34,1 cl. Courtesy of yespr. Label claims 9.8% ABV. Slightly hazy reddish brown with a dense off-white head. Spicy aroma with some burned malt. Quite full-bodied with very distinct burned malt, some spices and notes of cough syrup. A distinct, burned malt bitterness with quite some alcohol in the finish. Very unusual for a Barley Wine. 221108

34.1 cL bottle. Pours cloudy deep amber with a diminished tan head. Smooth malty and light spiced aroma. Light roasted. Flavour starts mild sweet and is followed by a hard roasted malty flavour swept in a delicate spice note. Warming finish with a lingering malty and bitter. Nice one.

Draught at Stockholm Beer Festival. Clear deep ruby, creamy head. Caramelly nose with some dried fruits. Full bodied. Balanced between grassy hops, caramelly malt and arousing alcohol. Soft and completely without edges. A great winter warmer.

Light light unclear medium amber color with a average, frothy - creamy, good lacing, mostly lasting, light beige head. Aroma is moderate malty, caramel, nutty, berry sweet, moderate hoppy, orange, spicy. Flavor is light heavy sweet and bitter with a long duration, and nice balancede. Body is medium, texture is oily, carbonation is soft. [20081122]

Bottle, 9.8%. Sweet and fruity aroma along with some dark malts. Hazy dark brown colour, small tan head. The flavour starts off quite sweet with a lot of spices, sweet cookie notes.

Draught@SBWF2007. Deep amber colour, not much head. Aroma is fruits, raisins, dark dry fruits and spices. Flavour is is very much the same in a very nice balance. Some spices and caramel too.

Bottle. Hazy orange red coloured with a huge off white head. Fruity aroma of caramel and dried fruits with notes of hops and liquorice. Fruity and spicy flavour of hops, grape fruits and caramel with notes of dried fruits. Dry hoppy finish.
