Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Sampled 10/7/2009. This Barley wine pours a medium brown color from a 11.5oz (340ml) bottle. Small sized white foamy head. The aroma is caramel, nutty and sweet. A medium bodied English Style Barley Wine. The malts are caramel, fruity and sweet. The hops are earthy. It a touch boozy, but that might be more to the minimal carbonation. Nice balance. Subtle flavors. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly bitter.

From a 22 oz bottle this poured a deep copper color with a tan head and good lacing. The nose is very much of alcohol and aromas of dark ripe fruits, The body is full and the feel on the tongue is more like cognac than beer. The flavor is full of brown sugar, lots of rich malts, caramel and toffee, and some light spices. The finish is bitter and the alcohol is present from the first sniff to the last sip. Quite a barley wine, You need to sip this one.

Bottle. Poured a slightly murky brown with a strong red hue. Aroma had notes of sweet caramel and molasses with an undertone of burnt notes. Flavor was sweet from the malts to begin with both alcohol and bitter hops in the finish. Nice and thick on the tongue.

11.5oz bottle. Pours dark ruby red with a small off white head. Aroma is caramel malt, toffee, coffee, chocolate raisins. Flavor is very much the same, caramel maltiness with toffee, sticky raisins, coffee, some light chocolate and brown sugar. One of the most drinkable barley wines I’ve ever had and at 9.5% you really don’t notice the alcohol.

Bottle. Pours a deep dark mahogany with a small beigh head. Aroma was malty with caramel, brown sugar and raisins. Flavor was malty and slightly sweet with dark fruit, caramel, toffee and was lightly hoppy.

Bottle: The aroma consists of caramel, toffee, chocolate, fruit, nuts, and earthy hops. It pours a mostly transparent brownish-red with a quarter inch off-white head that quickly fades to a thin ring around the edges of the glass. The flavor starts with caramel, toffee, and fruit. The finish has notes molasses, brown sugar, alcohol, and citrus and floral hops. Medium-full bodied with light-moderate carbonation with a somewhat syrupy mouthfeel.

Bottle 12oz: pours a murky chestnutty brown with a large off white head that stays as a thin line. Aroma is full of beautiful malts, caramellt, rich toffee, and a decent hop aroma that is very earthy. Also some brown sugae notes that compliment well. Some fantastic baked cherries come out as it warms. Fantastic flavor is very malty but a good balancing hop bitterness. The flavor is extremly mellow and a real joy to drink Dlight waing reminds you of the alcohol a great barley wine.

Pours a deep orange with red notes. Nose is bready, sweet malts, cherry, ripe fruits, yeast, toffee, mild smoke, floral earthy hops. Flavor is musty sweet malts, caramel and toffee, earthy hops, cherries, grapes, plum, bread. Has some sherry notes, nice aged feeling oxidation. Beauty!

Bottle from the Beer Store San Francisco. Dark garnet brown with no head. Aroma and taste of maple, molasses, mild chocolate and cereal grain with some mild spice notes to the finish.
