Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

11.5oz -> snifter. Poured a hazy, amber-brown, with nearly no head. Smelled of alcohol, honey, overly ripe fruit - cherries or plumes, sherry, spice, and subtle hops. Fruity, caramel, "liquor-like" taste, as the commercial description says, with a stronger hops presence than was revealed in the aroma. Nice hoppy bitterness in the finish. Much thinner body than expected; almost too watery. Overall, a fine beer.

Bottle split with Dallas. Pours a clear red body with barely any lacing. Aroma (if you breathe in strong enough) is strong alcohol - maybe gin. The flavor is somewhat diminished, but also smooth considering the abv. Nice Bwine.

Pours a dark brown with no head. Faint alcohol in the nose with a peppery bitterness. Very sweet taste reminiscent of honey. Kind of shallow on the flavors. Syrupy mouthfeel with no aftertaste. Not bad.

Red tinted hazy brown pour with lots of crap floating around. Malty aroma with nuts and molasses. Light sweetness with tons of malt and whole grain. Some fruitiness. A bit heavy.

Bottle.
Pours a deep mahogany/amber hybrid with a small head and nice lacing. Aroma is stale leaves and cheap red wine malt. Flavor is peppery sweet hops with sweet candied malt. Thick and coating on the tongue. Kinda good but too peppery and not enough sweet spice. One of the coolest labels I’ve seen.

bottle poured a brown in color with a thin off white head with little retention. aroma has plumb, sweet raisin, brown sugar, and earthy yeast. thick coating mouth feel with light carbonation. flavor is rich in the dark fruit, hefty malted base, bitter hops, and spicy earthy yeast. quite a smacker.

Pours a brownish red color with a medium to large head. The aroma is sweet with floral notes and some licorice and herbal hops. The flavor has a great control over moderate sweetness which is balanced by a very large hop character in a sort of herbal way akin to say an aged bigfoot. There are notes of apple and some caramel, the beer has some spiciness and everything is mind bendingly balanced. The palate is silky, oily, and has a nice strong viscosity.

From a 22 oz bottle this poured a deep copper color with a tan head and good lacing. The nose is very much of alcohol and aromas of dark ripe fruits, The body is full and the feel on the tongue is more like cognac than beer. The flavor is full of brown sugar, lots of rich malts, caramel and toffee, and some light spices. The finish is bitter and the alcohol is present from the first sniff to the last sip. Quite a barley wine, You need to sip this one.

Bottle. Poured a slightly murky brown with a strong red hue. Aroma had notes of sweet caramel and molasses with an undertone of burnt notes. Flavor was sweet from the malts to begin with both alcohol and bitter hops in the finish. Nice and thick on the tongue.
