Commercial Description:
This noble winter beer is brown in colour with flaming red highlights. Its taste is delicately sweet and liquor-like with a hint of burnt caramel coming from the malt and a prolonged boiling time. It is a very bitter beer with aromas of hops and alcohol, and flavours reminiscent of red fruit brought by the English-type yeast we use to ferment it. The aftertaste is accentuated by the wonderful flavour of hops. Solstice d’Hiver is brewed only once a year, and is then aged for 4 to 5 months before being sold. This aging process is necessary to achieve an ideal equilibrium between the sharp bitterness and the other flavours in the beer. After aging, it is then sold starting mid-December of each year, until stocks last.

Draught at Volo. Dark amber in colour. No head. Raisin aroma with cocoa, prune, plenty of hops. Body is medium with a slightly oily mouthfeel. In the flavour there is dark fruit, cinnamon, alcohol, dark chocolate, cocoa. Hop presence is substantial. Finishes with long, lingering raisin.

12 oz. Translucent chestnut with a small lasting ring of foam. Nose is chocolate, caramel, cherry liqueur, and raisin. Flavor is cherry liqueur, chocolate, and rummy dates. Medium-heavy body is smooth and very drinkable with a nice dark fruity-dry finish.

12 oz bottle from Bev4less. Pours a slightly hazy chestnut brown color with a small beige head that soon fades to a fine film. The aroma is soft with sweet roasted malts and some nuts. The flavor has molasses, dark grains, biter walnuts and bit of piney hops. The palate is full and smooth with average carbonation. The finish is long with lingering biter hops. Overall: A very complex little beer that deserves zen-like contemplation, a hop lovers winter warmer.

Bottle. Pours a dark reddish brown with a thin tan head, very little lacing. Raisins, syrup, and sweet malt in the nose, very mild aroma. Dark fruits, plums, sweet caramel, and sweet malt to start, finishes with a nice touch of hop bitternessand spice, very smooth. Sticky mouthfeel, but goes down easy, alcohol is only slightly present. Very nice, the hop presence is a bit more pronounced than most barley wines.

11.5oz bottle from Knightly Spirits in Orlando. Deep dark brown pour with a thin beige head. Aroma of alcohol, plums, caramel and molasses. Brown sugary taste with dark fruits and cherry. Hoppy bitterness in the finish. Slick light to medium texture.

Nice looking pour with a luscious head. Easy drinking with an earthy peaty vibe balanced by some light pine citrus and quieted raisiny malt rowards the end. solid

Pours a very dark amber color with a huge extremely persistent head of tan colored fine foam that leaves thick ropes of lacing. Nose of pear, plums and red grapes. Taste of raisins and caramel with completely undisguised and out-front alcohol. The alcohol quickly fades and then the hops come into the flavor, quite strong, and linger to form the nicely bitter finish.

Bottle:   Deep caramel, thin sudsy off-white head, spotty lacing.   Floral and spicy aroma.   Reminds me of bath soap to a degree, but without all the soap.   Actually, reminds me of freshly washed hair.   I guess its shampoo that it reminds me of.   Lets just say that its this smells somewhat floral and herbally.   Malty start, floral, with that herbal aspect that reminds me of shampoo.   This is not a hoppy IPA by any means.   Certainly on the malty side.   Body and mouthfeel are moderate.   Smooth, but not that big.   Finishes with a slight floral aspect.   This is not hoppy whatsoever.   Nice change of pace.
