Commercial Description:
A neo-lambic ale that goes through both a yeast and bacteria fermentation and is then aged on oak chips and 400 pounds of Delaware peaches. This beer is very tart and complex. It arrives cork-finished and bottled-conditioned in champagne bottles.

Bottled: Orange colour. Unclear. Fruit, (apple, peach), light sourness in aroma. Flavour is light sour with a balanced sweetness. Fruit. Is sweet in the end.
Rerate after taste @ Cantillon: This is more fresh. Appearance is same. Aroma is quite fruity and citrusy. Flavour is sweet, spiced and fruity with some light sour notes. Is quite refreshing.

Decent Bret acidity. Nice balance of peach and residual sugar. Very little carbonation. Clean and somewhat thin mouthfeel altogether not bad but not great. Needs more conditioning and more malt body. Tomme Arthur has NOTHING to worry about.

Bottle corked and caged and brewed in 2004 per info. on the bottle. Poured a very small white head that quickly dissipated, no lacing, fine-medium sized bubbles, carbonated, and a pale yellow hue. Aroma was sweet, fruity, somewhat vinuous, and some vinegar. Flavor was sweet, sour, tart, tangy. Almost too sour and tart. Tingly palate. Light-medium body. Not to my liking. To each his/her own I guess on this one.

This bottled brew poured a very small sized head of fine to medium sized quickly diminishing clear bubbles that left behind an unnoted lacing. The body contained lots of carbonation. The top half of mug was transparent while the bottom half was hazy and overall was orange in color. Its aroma contained notes of lambic like fruits. Its mouth feel is initially tingly and sour with a lingering dry palate and a sour aftertaste. Its flavor contained dry fruity sour lambic notes and was not a brew that I cared much for. Not one I would buy again.

Aroma: rose petals/hips, honey, hibiscus flowers
Appearance: murky/golden yellow, very small white head
Flavor: honey, roses, hibiscus flowers, vinegar, earthiness, limes, mint, very floral
Palate: sweet with tart bite, smooth, fills the mouth, fruit and milk aftertaste
Yummy!

Well, we all know the story behind this one. I sampled two bottles, the first from Eric way back in December 2003 and the next, purchased in September 2003 at Beers of the World in Rochester, New York. Peachy, apricoty aroma with some tart scents and nothing else. Light-bodied with absolutely no carbonation. Aftertaste shows sugars, fruits and nothing else. Overall, if the beer developed carbonation, body and real character, then we might be talking. All the bottles were 75 cL.

Looks just like apple juice. No carbonation at all. Aroma is peaches and lambic. Flavor really good but goes flalt (as a result of the non carbonation i guess) once it hits your throat. The palate is really wrong somehow. I want to like this alot but it just lacks the palate.

Ok, it took me a long time to finally track one of these down. thanks eric!! Clear apple juice body with an apple huice head, ie. no head. The aroma is peach and some definite lambic quality, slightly sour, bacterial adn tart. The flavor is nice, tart, some almost sweet peach. Really interesting, but.... the total lack of carbonation really detracts. If this thing was carbonated at all it would be quite good. But as it is it is just kind of there. Not terrible, but lacking.
