After the first three AWKAHHHS it becomes a syrupy tart citrus, kind of like the juice you find in the bottom of a can of madarin oranges thats been left on the shelf a little too long. I did try a number of sips after my first three and it does have an "interesting" taste to it, just not one to my liking. Taste is watery bland up front, before turning sharply sour, some medium-sweet peach. Uncarbonated, mild syrupy, tart. Sour peach aroma - veers toward astringent, actually. Some earthy flavors in there, and it is rather quenching. OK, but cetainly not worth the $11.99 I paid for it. Carbonation has picked up dramatically and is on par with many other great lambics. Sourness has developed as well. Has a traditional lambic aroma of light brett, heavy lacto bacteria, sour aromas, lemon and citrusy with a hint of chlorine - similar to drie fontienens- of course there is still a nice peach aroma in there that is very appealing now. The flavor is nice and sour leading to a tart and mouthpuckering finish. Some dry peach flavor with more barnyard funkiness and lactic bacteria. Very sour, but not quite as sour as some from 3f or cantillon. Previous rating was 1.1 when it was first released and was pretty much undrinkable crap. Although I must say- at HWOH we opened 1 bottle each day and the first seemed quite different than the second bottle, so there may still be a large deviation between individual bottles. Still getting better with age though.
Mar 2004: Biggest let down beer from DFH. This beer sucks- and I actually like most sour style of beers. First of all- after popping the cork there was absolutely no hiss from gas escape. Completely flat and obviously there was no head. Bland cloudy yellow dishwater look, with no bubbles or anything. Aroma is sour and citrus with only slight hints of peach. Flavor is very bland and sour, with some peach but I dont see anything complex here. I dont know why they even released this beer. Either they should have waited a few years - or just dumped it. I didnt pay the 8 bucks a bottle for this ( a friend did) but if I did- I would be pissed. fly (1332), austin, Tejas, USA

GABF 2005. Most often don’t rate GABF beers, but I sat there drinking sample after sample of this. Aged three years and some mention by rep that originally it was seen as unfit for sale (or some words to that affect, sorry for mangling what was really said). But this was awesome if you happen to like sour beers. Acidic, but after having so much La Folie the previous day can say this was no way near that. Can’t say that I could list the flavor-fest that was going on, but it was just a delight.
