Commercial Description:
A neo-lambic ale that goes through both a yeast and bacteria fermentation and is then aged on oak chips and 400 pounds of Delaware peaches. This beer is very tart and complex. It arrives cork-finished and bottled-conditioned in champagne bottles.

Hazy yellow/orange, just a few bubbles, look nearly flat. Nose of sour, funky peach juice. Same juice flavor with other light fruits (apricot, maybe some pear), plenty tart. Not very complex, but extremely tasty. Body is lightly syrupy, heavy juice-like, surprisingly balanced carbonation. Excellent. Underrated.

CT V. Straight sour and not much of the peach flavor at all. I really couldnt handle this especially right in the middle of the tasting. Usually I can put down the sours no problem but this just turned me off.

2004 Vintage***You need to pour it all at once. The residual bottle sediment relaxes the acidity. My original pour was a third of the bottle and the color was golden w/ a shallow spritzy froth w/ medium sized bubble spatter. I dumped the remainder of the bottle and it became a hazed, tawny golden w/ the sediment. The aroma is Champagne like w/ defined unrippened peaches and green apple. Light to medium nectar w/ mellow residual effers creates a soft cotton texture. The juice goes almost flat after a while. Flavors are very dry like a Brut (bone dry) Champagne. It’s so dry it parches my whole mouth, seemingly extracting all the existing moisture. It’s sour and minerally w/ nuances of sea salt, unripened peaches and plums, citric acid, and a touch of leather. The finish is long and sour w/ an acidic bittering component. Towards the last third I threw in a pinch of raw, unbleached sugar and it calmed the acidity a bit more. Overall: this is a food brew although I am not sure what it goes with. I tried a few things to no avail. Even an over salted pork loin didn’t do it. My last thoughts: DON’T DRINK THIS ALONE!

C-bus tasting 5. Sour aroma with some fruits. Golden brown body. Medium palate supports a very sour flavor that has some peach tastes. Not too shabby for a crazy DFH experiment

Shared at Columbus Tasting V.Lots of peaches in the aroma.Pours a hazy yellow.Flavor is very sour.Finished sour as well.

Sampled at Columbus tasting. Poured very pale gold. I am sorry, this was simply awful to me! Very sour, and the sour overwhelmed any other taste for me.

750 ml bottle sampled at Columbus Tasting V - Poured Amber with not much head. Aromas of brown sugar and slight peach. Flavor is quite sour. I got a little peach in there but it seemed more lemony than peachy to me. Very sour. Palad is acidic and quite sour. Didn’t like this one much.

Bottle at Dilly Deli from Peanut.. Poured hazy golden color with a minimal rocky off-white heads that was mostly lasting with minimal lacing. Heavy peachy citrus aroma. Medium body with a slick texture. Medium peachy tart flavor with a medium tart bitter finish of moderate duration. Much different then expected.
