Commercial Description:
Vast in character, luscious & complex. Brewed with peat-smoked barley, this strong ale is brewed with organic juniper berries, vanilla & maple syrup. It’s aged on oak and fermented with a blend of English & Belgian yeasts.

Complex aroma of smoke and barrel. Taste gets the wood, peat smoke,the juniper berrie and fruit. Tasted not swallowed, but like a tea. Medium mouthfeel.

Wow. Incredibly complex and distinctive ... a different sort of barleywine. Deep, coppery brown in color. Aroma is malty with hints of vanilla and maple. Flavor is very, very sweet and filled with vanilla, maple, and what I assume to be juniper berries, although I did not recognize them at the time. Syrupy on the tongue. Overall an excellent beer, but not one I’d want often. A bit too sweet.

4/28/06: 12 oz bttl. Pours a copper-red clear with a small fizzy white mostly diminishing head... Aromas of toasted malts, molasses, tawny port, oak, and Brett... Taste is initially moderately sweet with long, oaky, sticky finish... Med-full bodied with a lively, bubbly texture and long chewy finish... Yeah good... Age it... Fresh it’s a handful... Yum...

Pours a brownish color similar to the color of maple syrup with little to no head. The aroma is dominated by sweet vanilla, oak, and also smokiness. The mouth feel is large, smooth, and blunt. This beer has the sweetness and yeastiness of a Belgian but with a smoky, woody predominance in the flavor that is unlike anything I have had before. Must be the oak barrels DFH ferments this in. The after taste leaves you with smoke and alcohol. I bet this would be fantastic in a couple of years.

Pours dark brown with a small thick white head. Aroma is tobacco, vanilla, maple syrup, and burnt wood (smoked). Taste is thick, maple syrup, vanilla, and oak. Though thick, easy to drink with lots of aroma and taste in each sip. This is a very enjoyable brew.

July 2006 - Such mixed feelings...the beer poured crystal clear beautiful reddish brown color, next to no head or lacing. Very faint aroma. The beer was sweet, very malty. Flavors of caramel, massive maple syrup and a sort of ashy oak were all present. A good dessert, but a tad imbalanced. There was next to no hop bitterness in this one at all and a little twang would have gone a long way, methinks.

One of the best barley wines I’ve had. Sweet with caramel and vanilla maltiness. Very warming and heavy....not a beer to be taken lightly.

Typical flavor characteristics of DFH...OVERLY SWEET!!! Color is vibrant orange/brown with minimal head. Aroma is sticky sweet with a flavor to match. Oak, vanilla, caramel, and toffee...definitely a high caliber brew but nothing from them (other than the 120 Minute IPA) has had the "shock and awe" factor. Premium price...try anything from this brewery and you’ll see the similarities.
