Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

A deliciously strong brown ale. Very woody flavor. Served cold from bottle. Pours dark brown with a small tan head. Very malty aroma and great roasted vanilla taste. I like it a lot.

Pours dark brown, almost black in the glass, with a thin khaki head, some lacing. Some unusual high wood aromas, dark fruit, coffee, molasses, and hay. Thick, velvety smooth body, slightly dry. Tons of malt, with plum, fig, and molasses flavors, subtle wood notes, and some grass and citrus in the mild-bitter aftertaste. Well balanced.

From a 12 fl. oz. bottle marked: Bottled on 07/24/8 E. Avery dark brown to black our with the consistency of molasses. The tan head is thin but lasting. The aroma is of chocolate malts and hops. Heavy mouthfeel. A taste of chcolate, cocoa and hops. Dry finish. Quite good.

Very intense sweet aroma. Taste is all malt. High ABV. Chocolate, rum, berry. Barrel aged taste. Porter or stout? Strong Ale? Really?

12oz bottle. I have got to drink this a few times, but I wanted my own bottle to rate. Served in a Boulevard chalice. Dark brown color with a reddish tint, smallish head. Wood, malt, chocolate, rum, dark fruits, vanilla, and dark caramel in the aroma. It smells great. Great mouthfeel, big bodied, malty beer with some offsetting tannins, roast, and mild alcohol. The flavor is milk & dark chocolate, dark fruits, spice, and some warming alcohol with a great wood backing that gives some nice tannins, vanilla, and is much smoother and seemingly more flavorful than your run of the mill oak barrel aging. This is a great american brown, a great wood aged beer, really just a great overall beer. Nicely done DFH.

Bottle from Malt & Vine. Pours a thick dark brown. Aroma is incredible with nutty hints and a touch of cedar (similar to palo santo or is my mind playing tricks?). Taste a nice roasted malt with hints of vanilla and caramel. The alcohol is hidden well and not overpowering but has a long finish.

12 oz. bottle from Grape & Gourmet (bottled February 17, 2009). Pours very dark brown with a tan head. Aroma of sweet caramel, vanilla, roasted malt, and alcohol. Taste of vanilla, maybe some coffee, chocolate, and certainly the alcohol. The alcohol is not unpleasant but it is prominent. The flavors are very complex and each sip almost tastes different. Mouthfeel is creamy and there is some alcohol burn. Hard to know exactly how to describe this one; it’s not a traditional brown ale, porter, or stout but it is dark. This is a very unique offering and it is exceptional.
