Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

bottle @ redlight redlight. Huge choclate nose, dark malts, slightly roasty. Pours chocolate brown with a thin tan head. Malty, roasty, chocolate, spicy flavors, hoppy with hints of citrus, woody flavors like vanilla with hints of cinnamon, as it warms i get hints of anise. Awesome!

Very deep brown, almost black. Dense brown head. Aroma of vanillins, caramel, coffee, but no hops. Full mouthfeel with medium-low carbonation. Flavors of caramel, coffee, vanilla. Little or no hop flavor. Alcohoilic but not overpowering. Hop bitterness just balances the sweetness but the balance is definitely in favor of the malt. A heavy, malty after-dinner beer. Wonderful!

Bottle, courtesy Quintana. Very dark brown, almost black, with offwhite head. Wonderful earthy aromas of cigar smoke, tobacco, vanilla, and general roasted malt notes. Alcohol is entirely hidden in the nose. Flavors of dry dark roasted malt, with some vanilla sweetness and smoke in the background. Alcohol is surprisingly hidden at 12% and the thing is incredibly drinkable. Comes across much like an amped-up or sweetened-up dry stout. Very tasty, but I found it slightly lacking overall in depth of flavors and a tad thin on the palate.

On tap at brewpub. After several misses from DFH (zwaandele, golden rev) this one is right on. An amped up brown with great wood character, the malt and vanilla sweetness tempered with the dryness of the wood, the alcohol and hops. Rich and delicious, a great after dinner beer.

In the bottle from By the Bottle in Vancouver, WA.
Pours black. No light getting through whatsoever. Tight medium brown head. Aroma is sweet with a tootsie roll note as well as coffee and vanilla. As it opens up, you can definitely smell and taste the oak; sort of like a barleywine. Very sweet but almost medicinal. Hops are very present despite the strong malt backbone at 12%; though the alcohol is really kept in check. Thick mouthfeel and a medium-long finish. Surprisingly, it’s not the dark malts that are staying with me but the hops. Very interesting and very drinkable. I’m sure a couple months of aging wouldn’t hurt either.

Very dark pour with brown head. Tight bubbles. Tastes like oak, chocolate, coffee, vanilla beans, and a slight hint of banana. Slight bitterness on the end of the tongue. Bitterness dissipates as it warms up. Very nice beer!!
