A solid pour produces a fizzy, pale white head the quickly disappears. The cider is a gold color that shows a brilliantly clear, straw blond color when held up to the light. The aroma smells of fresh cut aromatic and tart apples, has a touch of moist modeling clay character in the finish, and even has some pear like aromatics to it. The nose is clean and fruit focused as I expected, with a vibrant apple note.

The beer is lightly sweet, with just enough sweetness to keep the tartness from being dominant. This is quite light bodied, but the residual sugars keep this from being as light as water; there is just a touch of viscousness here in the palate. The apple flavors are not quite so vibrant as they were in the flavor, but there are still here nicely; this beer in fact does have a nice, floral, fruit character that is well balanced by the touch of sweetness and the soft acidity. In fact I like that this Cider is mostly dry, it makes it much more enjoyable and drinkable. I do wish this was a bit more rustic, as my favorite Ciders have a wild rusticity to them created during natural fermentation. This could certainly use more complexity, but in the end this is easily quaffable and just enjoyable enough.

Bottled. This is a fantastic cider. Deep, complex woody notes in the aroma with a crisp acidity. The flavor is very rich, pure apple, spritzy and supremely refreshing. More woody notes, some earth, cucumber, pineapple, lemon. So easy to drink, with a perfect level of sweetness in an overall pretty dry cider. Wonderful.

Bottle, thanks to Puzzl. Finally time to sit down and do some at home rating. Is there a proper glass for cider? Big foamy head that collapses quick, making this look clear yellowish/gold. Aroma is crisp, green apples. The flavor though is both sweet and dry, tart and sweet, acidic and lightly funky. It’s more acidic and tart then anything. Goes really nice with this triple creme goat cheese. The finish tastes like apple core and stem. Thanks Andy.

[1427-20080531] Bottle. Sweet juicy apple aroma. Clear, light pink yellow body with no head. Dry apple flavour is not as sweet as it smells. Light body is tart with a bit of a dry finish. Average but refreshing.

Yellow cider with a light funky apple aroma, pleasant and original. In mouth a nice funkey apple with light sourish notes. Very refreshing. Tasted at Festival des Fromages de Warwick, June 14, 2008.

Bu en fut à La Crème de la Crème Bistro (Vieux-Montréal) (12 oz). Jaune très claire comme du vin blanc pétillant. Arome de pommes légèrement sucré, avec des notes de fleures de pommes. Pétillant dans la bouche, goût de pomme mi-sucré, un peu acide. Rafréchissante, mais peu savoureuse!

Cidre disctribué par Boréale. Robe jaune paille très claire. Légèrement pétillant. Arômes de chaire de pommes. Finale sèche. Saveurs de pommes rouges.
