Commercial Description:
We have just solved a brewery mystery (and it is delicious). We wondered what would happen if we put 2004 Dominion Millennium in oak barrels that had bourbon in them for five years. Three months later we had Oak Barrel Millennium. Something special, we think. Ruby-red color with a wide range of complex flavors. Malt and sherry predominate.

A hazy dark amber beer with a thin off-white head. The aroma is sweet with lots of overripe fruits, as well as light notes of alcohol, caramel, and lemon. The flavor is sweet malty with strong notes of alcohol and overripe fruits, leading to an end with notes of citrus combined with a bitternes, and a alcohol burn lingering on the tongue.

(Bottle 35,5 cl) Courtesy of CaptainCougar. Pours a hazy amber golden with a small, white head. Distinct aroma of oak and bourbon. Medium body - surprisingly considering its strength - extremely dry with a distinctly alcoholic whisky note. Really, really dry as a bone - I would’ve liked a little more sweetness here. 230807

12 fl oz bottle. Pours clear and golden with a lacing light orange head. Sweet peach fruity and malt sweet aroma. Flavour is sweet at first. Reveals a slight woody note and a mild alcohol note. Has a nice vanilla smoothness. Ends mild and with a soft alcohol warmth.

Bottle. [<a href=http://www.ratebeer.com/ViewUser.asp?UserID=3 target=_new> Courtesy of kmweaver]. Light unclear medium amber color with a average to large, frothy, good lacing, fully lasting, light beige head. Aroma is moderate to light heavy berry - plum, raisin, wood, some caramel, fruity - tropic, notes of vanilla. Flavor is moderate to light heavy sweet and bitter with a average long duration. Body is medium to full, texture is oily - smooth, carbonation is soft. (260408)

Bottle, 11.4%. Vinous, fat vanilla aroma. Hazy brown/red colour. Very small tan head. Distinct vanilla flavour and medium bitterness in good balance. The vanilla somehow reminds me of vitamin pills, but it is quite good. Very late alcohol flavour, but not that noticeable.

Beautiful red-amber color. The aroma has an elegant vanilla presence and Bourbon whisky touch. Full mouthfeel, sweet, malty, with a vanilla touch and rum flavor. Well balanced by a strong bitterness.

Comparison to the non oak aged version. This one has less malt aroma, less complex flavor, less alcohol feeling, less bitterness, a thinner body. It’s softer. A different beer, to drink once in a while.
