Initially, the nose was acrid, cat-pissy and harsh, but after warming and breathing a bit it really changed and mellowed out to a nice, yeasty, white pepper and citrus with a touch of funkiness. Spicy and dry, peppery flavors, yeasty. Good carbonation provides a lively, medium to light mouthfeel. A mild peppery bitter closes the experience. A delightful saison!

Jan 5, 2008 Pours from bottle to chalice a deep, slightly hazy golden-orange color. Pour creates a thick, tight white head with great retention throughout the glass. Just a conucopia of complex luscious subtle aromas showing off notes of apple, pear, banana, lemon zest, fresh yeast rolls, coriander and clove with a touch of apricot. Pleasant livey mouthfeel with a full, fluffy body backed by a tingly spritziness. Flavors are crisp and tart starting off with a subdued fruity sweetness with flavors of ripe pear, apple, apricot and banana. This seamlessly melds into a more assertive flavor profile of slightly bittersweet lemon zest, herbs, spices and wood pulp finishing with a faint but balancing Noble hop and warming alcohol ending. Very drinkable and very easy going down for a 9.5%’er. Excellent!!

Jan 4, 2008 Oh man how I love saison and this one is no different. Pours out a bright and wonderful orange-yellow color with a thick white head. Aroma is rich and full of yeast, cloves, corriander, and perhaps a bit of orange citrus. Flavors are very nice full of doughy yeast and spices with a nice fruity flavor. Pineapple, pear, and banana all come through on this one. However there is a slightly funky flavor and bittering towards the end that lets the drinker know that this is truly saison. Mouthfeel is heavy and nice, almost chewy and the carbonation I found to be just about perfect. The alcohol in this one is also very well hidden as this beer is incredibly smooth. I had this one fresh, wish I had one more to age to see if it improved at all.

Jan 3, 2008 Pours a cloudy golen color with foamy white head. Aroma is slightly bitter with hints of fruit and spice. Extremely enjoyable smoth tasting beer. Kind of creamy with hints of fruit and spice with a crisp finish.

Jan 2, 2008 Pours a hazy gold, plenty of carbonation and an off white head. Nice clove/coriander yeast aromas with some malts. Great mouthfeel. A little sugary sweetness. Dry, slightly spicy finish with a little alcohol coming through.

Jan 2, 2008 Draught @ Kerstbierfestival 2007 in Essen, BE. Unclear medium yellow orange color with a average to large, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, roasted, spicy, moderate hoppy, light citrus, light coriander. Flavor is moderate sweet, acidic and light to moderate bitter with a long duration, and a dry finsh. Jan 1, 2008 750 ml bottle, from BevMo LaJolla. Pours hazy peach amber color with a little sediment and a huge white head that leaves thick lace. Fruity and yeasty, tangerine, apricot, coriander, clove in the aroma, with bread dough and whiffs of white pepper. Flavor of sweetbread, candied fruit, pinapple, clove, nutmeg, bitter herbs, a bit of alcohol, umami notes as well. Full body, smooth and velvety, lightly tingly carbonation - perfect mouthfeel!
