The flavor has a little bit of the citrus flavor as well with a ton of yeast. This saison got my attention from the first sniff and kept it through the last swallow. Appealing frothy white head that sticks around. The body is cloudy dark yellow. The first impression from the aroma is smoke and funk from the yeast. That’s followed with notes of bread and grain, alcohol, caramel and lemon. The flavor is lightly sweet, moderately bitter and moderately acidic. Medium body. Smooth mouthfeel and lively carbonation. Nice warming in the finish. Yeasty aroma with ample spice- coriander, peppery notes, candied sugar, sour apple, citrus, and a bit of alcohol astringency as it warms. Some barnyard yeast reminiscent of a lambic is also present. Flavor initially carries bready and sweet malt notes, but finishes dry and spicey. Really unique balance is achieved both in the flavor and in the palate, which is at once creamy and dry. The nose is huge with lots of lemon lime, coriander, mint, earthy yeast and fresh dough. The body is velvetty and malt driven. Notes of caramel, sweet bread and straw are abound. Finishes tart and dry. Very good. chronictonic (399), Wyndmoor, Pennsylvania, USA Dec 24, 2007 Updated: Jan 5, 2008on tap - mcmenamin’s (philadelphia) - pours cloudy, straw colored blonde. no head at all in the glass. no visible carbonation. sweet aromas of candy sugar, yeast and spices (coriander perhaps?). Flavor is like a thick, distilled, hefeweizen. Sugary sweet, spiciness, some bannana and yeast flavors. Smooth mouthfeel - velvety. Lo carbonation. Quite drinkable, but not what I would traditionally call a "winter" beer.

There is spice, and yeast on the nose. The taste follows with a bit of coriander, pepper and yeast. The palate is good although not exceptional. The mouth feel is medium. Overall this is a very nice beer although I don’t think it has anything that would define it as a holiday beer in American terms.
