Spiced yeasty aroma, very classic belgian. The flavour is soft caramel blending into a more strong spice flavour. Some alcohol presence in the finish together with a bitterness. Keynote here is the balance, the beer as such holds nothing different from many other Belgians. The balance however is perfect, not to strong and not too weak eather but very smooth - nice. My bottle was slightly skunked, but I will overlook that as the product of a green bottle sitting too long in the well lit store. Anyway, I’m also picking up a bit of earthiness and maybe some citrus in the nose. Upon entering the mouth, I taste grass, acid, clove, maybe a touch of plum. The answer is very! And the flavor? Creamy buttery malts, funky hay and leather, grassy and spicy hops, leading to a dry finish with a pointed hoppy bitterness. Freakin outstanding saison! Aroma is vanilla malts, yeast and spices. Cloudy and sorta funky in appearance. Flavor is full bodied spice, vanilla, somewhat peppery. Ends somewhat dry with a coriander taste. Very lovely beer. At first the aroma is more like a strong hefeweizen - clove, wheat, yeast, vanilla then it picks up a bit of tartness and funk when it warms up. Taste is smooth, surprisingly bitter, with a unique finish that is hard to name. It tastes kind of like sour dough bread and not in a good way. Maybe even a bit skunky. Alcohol hidden very well. Im not sure if I tasted this on a bad palate day, but the bottle I had didnt quite hit the lofty hights of most reveiws.
Lost of interesting spicy, light flavours, but these seems to be overbourne by a yeasty breadiness that made it feel like a very heavy beer.

Tons of wild yeast on the nose with hints of bananas, cheese and all those cool things you get from the genuine Dupont yeast. There’s never too much of that stuff. Taste is obviously very yeasty with some vanilla and a warming alcohol that takes a bit too much room IMHO. Overall feeling of drinking an alcoholised ice-cream. Moderately spicy with spices of the peppery kind. The generous amount of herbal hops is a pleasant surprise. All-in-all a great funky grassy spicy beer. Yeast-wise it seems very similar to the Moinette Bio but the rest of the recipe reminds me of the Moinette Blonde. Better in reasonable servings. I used to think it was as good as any Dupont but that’s because I always shared bottles with friends. After a 750ml by myself I’ve changed my mind, it is better in smaller servings. I prefer the lighter and funkier Vieille Provision and Moinette Biologique. Another great offering from a brewery which products are as popular and affordable as Windows PCs yet as reliable as Macs.
