Cork reads "2006"
Opened with a lot of "pop". Avec les Bons Voeux pours a beautiful slightly hazed golden that glows when held to the light. A big 3+ finger fluffy white head formed on the pour that receded to 2 fingers and became craggy and meringue like. Left thick drink lines. Very refreshing looking beer.
When I popped the cork I took a quick smell and was immediately reminded of champagne. When in the glass this beer smells exceptionally polished. All notes go together so cleanly it’s difficult to pick them out. Mild floral aromas are present and mingle seamlessly with a faint haylike barnyard funkiness and candi sugar sweetness. Tart green apples come along too. Still shows champagne like qualities.
This is the best saison I’ve ever expierenced by a long shot. Yes this beer is an expierence. Wonderfully done. Faint sugary sweetness along with a very mild funkiness go perfectly with the floral undertones. Green apple tartness gets in the mix as well. As this beer warms the green apple shows through more and more. Very refreshing.
Light body with a solid amount of carbonation. Glides through the mouth very nicely. Leaves the tongue awakened. Finishes somewhat dry.
I could, without a doubt, drink this beer all day long. Refreshing and light bodied. Very easy to drink.
This is a world class beer and one of the best, most polished saisons I’ve ever had. Crisp and refreshing to the point of almost being too easy to drink, considering such a high abv. Wonderful creation.

Aroma is wonderfully yeasty: notes of honey, bubble gum, barnyard, herbs, and pineapple esters. Taste is well balanced with both explosive esters and lightly bitter herbs. Mouthfeel is medium bodied with lush carbnonation. This is most delicious!
I had the chance to sample this on tap at Rich O’s. On tap it is not as estery, and rates closer to a 4. Still an excellent beer, but no bouquet of esters that makes this so delicious. badlizard (2338), Berkeley, California, USA

Pours cloudy yellow with a steady stream of bubbles cascading up from the center of my Duval tulip. A huge head leaves great lacing. Flavor is sweet and funky with Dupont yeast and holiday spices, pepper and alcohol. Palate is tart and sticky. A potent saision to be sure with the alcohol biting a bit. I would like to revisit with a fresh one since there wasn’t much hops here in this aged bottle. Grovlam (3805), Copenhagen, Denmark

Dust, barnyard, grain, spice, citrus, fruit, caramel, liquorish, yeast and herbs. Full bodied with a lively carbonation. Moderated sweet flavor with some bitter notes and hint of acidic. Light alcoholic texture. Spicy sweet finish. Excellent Saison! thewolf (5721), Kolding, Denmark

| 3.7 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 7/10 | 4/5 | 15/20 | May 12, 2007 750ml bottle. Tulip glass. Cloudy pale yellow with a large head. Aroma was yeast, citrus fruit and spice. The taste was tangy and dry with notes of yeast and peppery spices. The alcohol was noticeable up front, but mellowed as it warmed. (Or was it just that I was getting drunk having eaten little before opening the bottle.) This was a bit over-the-top for me and at this point prefer the more subtle Dupont Vieille Provision. But overall a very nice saison.
