Fresh cut hay, overripe melon, citrus-lemon-lime and some lightly spicy, grassy hops in the nose. Opaque tan-yellow with generous and lasting white head that recedes slowly with some lacing. Plenty of yeast in suspension. Generally spicy flavour has all the notes of the aroma with a strong herbal/spicy character. Medium-light body with refreshing strong effervescence. Bottle sampled at the Voyager par des Papilles group tasting Feb-05.

Okay first, I got a nailed in the forehead with the cork, thank goodness it didn’t hit my eye. 750ml bottle via Mullman, thanks! Pours a slightly hazed glden hue witha huge foamy head and oustanding lace. The aroma has notes of apricot, tangerine, hayfield, dusty musty cellar esters, coriander and pepper, and a woody character. The taste starts quite floral and even a touch hoppy. I get a lot of yeast background from this beer and a nice dose of oak. The finish has a wonderful spicy note and the citric nature comes rushing forth. The feel is quite lively and very refreshing, almost too much as I had finish most of the bottle before I knew it. This is a world-class brew, no question about it. Gosh how I fell into the magic that is a great saison. Very much recommended!

Cask at Manchester Winter ale festial 08 ... Very light hazy yellow ... lemon wheat nose ... ligth fruity almost wheat like soft lemon but packed full of flavour... quite tart ... quite juice.

Bottle. High creamy and long lasting white head. Hazy yellow body. Sweet fruity, apple pear lemon, aroma. Mild and sweet fruity flavor with no indication of the high alcohol percentage. Low carbonation and a sweet short aftertaste.

Poured a slightly hazy yellow with a huge rocky thick longlasting head. Aroma of yeast, dough, clove, and citrus. Flavor is citrus and yeasty with a sweet, spicy, alcoholic finish. Alcohol is balanced with the other flavors however.

750 mL bottle, not sure of the vintage. This pour was just beautiful... slightly hazy medium golden with a tall cap of creamy white head... some rising carbonation. Left a dense, intricate lacing behind... some sediment at the bottom of the bottle. Loved the nose, too... soft whipped lighter fruits, lemony alcohol, dusty spices, and citrus zest rounding it off. Flavor was even better... lemon was prevalent throughout, providing moderate tartness.. dusty and musty yeast gave it an old feel... lots of peppery spices... and grassy hops. Tartness and alcohol warmth increase as this approaches room temp. Exceptionally soft on the palate and refreshing. Higher carbonation worked well, and the alcohol was highly complimentary. This was an exceptional beer!

Yes, a replacement for champagne. Even non-beer drinkers will like. Like a good French white wine, nicely carbonated, with lemon and zest and vanilla. Good combination of hops, spices. Nice white head that stays. Crisp aftertaste.

Bottle (750ml dated 2005). Shared with my friend Alan, his bottle, from Premier Gourmet in Buffalo. Poured murky orange with a huge white pillowy lasting head, beautiful lacing and continual bubble action. Aroma of dry funky yeast and hops, very very herbal and sharp - really nice. Taste - herbal, fresh grain, alcohol, yeast, wow, this is complex, thick, astringent, nicely carbonated and damn the best saison I’ve had.
