De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

Finally tracked down this bad mother of a beer. Golden orange pour with some while pillowy head. Aroma of sour citrus, funk, leather. Sour flavor with a strong cheesy funk. Sourness really opens up as it sits. Strong, citrus sour and a bit of hay. Nice, delicate mouthfeel. Tart, leathery finish. Pretty standout gueuze.

bottle - Pours cloudy orange with a fizzy body and a one finger head. The aroma is full of wild yeast along with some nice fruity character. The flavor includes malt and fruit tones reminiscent of white grapes but the wild yeast funkiness is dominant. The funk kind of smacked me in the face for the first couple sips but became very enjoyable as I continued drinking. It’s a light to medium bodied brew with a bubbly palate. Very good.

Hazy amber pour with an effervescent body and small white head. Aroma is a funk fest- earth, nectar, citrus, horse blanket, lemon and acidic woodyness, and a slight bready yeast behind all the tartness. Flavor is an acidic sour-puss inciting funky citrus-nectar journey. This is a rude gueuze and I’m in love with it. A slight acetic acid puckering, smacking tart blast comes through with every sip. Palate is medium bodied, slippery, billowy and pillowy in its effervescence. Quite amazing.

Pours a cloudy apricot with a small white head. Aroma holds massive amounts of funk, barnyard, lemon zest, orange, horseblanket, and perhaps a bit of oaky woodiness as well. Flavor is great; very tart, with lots of funk, lemon, and other citrus. Got a hit to the tongue that reminded me of a more aggressive and less sweet yellow Sour Patch Kid; this beer is flat out rude. Palate attacks the tongue, but somehow I still want to drink more and more. Awesome gueuze.

All kinds of barnyard flavor and funky sourness go into the consummately smooth bottle. I’m gonna have to buy this stuff more regularly.

Bottle from Binnys. Pours murky golden orange with quickly fading spongy beige head. Nose is strong sour yeast and some citrus tart. Flavor is very sharp and sour, slightly lemon with hints of leather and musk. Being unfiltered adds a nice touch to this one. Very good.

Pours a beautiful, lively golden orange color with a nice white head. The aroma floors me. It’s sour, funky, smoky with lemon, leather, white grapes and, forgive me but,... cleaning product. The flavor is very tart and complex. Grapefruit seed, leather, wood, grapes, lemon pepper are easily picked out. Despite everything going on here, its very smooth, refreshing, and drinkable. A classic beer no doubt.
