Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

This one poured a pitch black color with a dark tan head. Aroma was black licoriice, dark roasted malts, some burnt coffee as well. Flavor was silky chocolate, lots of roasted notes and some smoke in there too.

Pours very dark brown with a dense two finger brown head. The aroma is chocolaty with plums, black cherry, smoke and molasses. The flavor is very roasted, almost burnt at the end. Very bitter, not very sweet, more of a molasses flavor with coffee and chocolate. Quite smooth.

Very impressive stout, that pours very dark and has a medium head. Odors of chocolate and caramel are prominent. Loaded with flavor, and is very smooth. By far one of my favorite stouts.

needs a breadier yeast or some oats IMO.
the citrus-seed flavor threatens but this stays ^drinkable for 22oz.

Sampled from a 22 oz brown bottle this beer poured a black color with an enormous very dark brown head that lingered forever and made grace lacing. The aroma was intense licorice with undertones of chocolate and rum. The flavor was licorice, cherry, cocoa and port wine. The finish was long with licorice, cocoa and bourbon. Full bodied. A licorice bomb. Decent.

Pours a dark black. Very tall, thick head. Dark tan with great staying power. Strange hop nose. Not something you find in imp stouts. Dark fruits. Up front chocolate. Tons of alcohol. Fairly hoppy. Fortunately, not extremely hoppy. Still too much for my preference. Thicker body, not as thick as some imp stouts. Highly carbonated, again more then usual. Carbonation helps with the hops. Overall, I like it better then I thought I would. A bot more hoppy then I like my stouts, but very good nevertheless.

Outstanding. This imperial stout has a fresh and clean, bright flavor to it, with nice roasted flavors, smoothness and balance - nothing harsh about this one.
