Deep orangey-brown color. Moderate offwhite head. Dryish-sweet malt aroma. Floral and herbal notes, some wood, and a whiff of yeast. A light malt body, medium sweet, with a certain sourness underneath. The flavor from the birch sap is probably expressed by a light spicy, sharp herbal and floral taste. A good amount of earthy bittering hops is added. Mouthfeel is dry and light astringent. Sharpish, spiced and hop bitter ending. Overall an interesting experience. Hazy brown, frothy head.
IPA-like, flowery hops. Sweet body, a bit herbal. Slighlty oily, a bit heavy. Some oakiness, dry finish.
Hard to distinguish the birch sap, it would ahve been very interesting to try two versions, one brewed with sap, the other with water.

A finger of creamy offwhite head, leaves plenty of sticky lacing. Aroma is almost belgian. Spicy, herbal, sweet malts and yeast. The fruitiness, sweet malts. herbal and spicy notes make up most of the flavour, along with a solid bitter finish which is almost a bit too sharp. Medium body, sparkly with loads of small bubbles. A nice session brew with a certain complexity.
