Cask; Regular.
The first beer brewed by the Falstaff Brewery, Phœnix is a dark copper colour beer with lots of body and a sweeter taste. At an ABV of 4.7% it’s been a hit with men and women alike. So named after an article in the Derby Drinker headlined "The Falstaff Brewery to rise from the ashes” Phœnix puts Falstaff beers firmly on the map

Cask at the Falstaff, Derby. Copper with a thin cream head; fruity malt aroma; and rich fruity roasted malt flavour; finish is gently bitter and sweet. Not bad for a first attempt.

Copper beer with a small but lasting white head. Fruity aroma with peach and lemon. Dry caramel malty flavour, with some hop flavour coming through.

Good-looking copper with a solid off-white cover. Caramelly and earthy toasted malts are well extracted and foam a fine background on which are added some rather generic hops. Pretty weak flavour association in mouth, leading nowhere. Medium bodied, astringent and overly grainy, husky even.

Cask @ Volunteer Arms, GBBF 2007. Pours a clear amber color with an off-white head. Has a malty caramel aroma with some fruity hints. Fruity malty caramel flavor with some hoppy hints. Sweet malty fruity finish with a slightly bitter aftertaste.

Cask (handpump) @ GBBF 2007, London. Clear light to medium amber color with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, caramel, butter. Flavor is moderate sweet and light bitter with a average to long duration. Body is medium to full, texture is oily, carbonation is flat.
