It also has some rooty flavors, light musty qualities, and then some apricot in the finish. This beer is amber in color with a thick off-white to beige head and a good level of carbonation. It is sticky on the palate. This seems to be a pretty mild/reserved offering from Fantome, but well-balanced overall. It isn’t too spicy, too sour, or too bitter.

Nose has tons of black pepper and coriander. Some apple or apricot on the nose and some definite funk. Taste is slightly tart and sour but very peppery after the initial funkiness. Pours cloudy dark reddish-brown, big off-white head. Aroma is a hint of brown sugar, sour green apples. Taste is a quick initial hit of brown sugar, quickly overtaken by a fresh soft green apple sourness and hints of barnyard. Hint of very earthy hops poke through a good way into the mild, sour finish. Aromatics lead off with a blend of caramel, nuts, green apples, bitter greens, freshly turned sod, strawberry tops, and cherry pits.
Hints of almonds, freshly skinned bark, and musty cider follow through.
Medium bodied, creamy and a bit crisp. Fairly dry and a finely carbonated mouthfeel.
Light malt, cocoa dust, and apple skins start the pallet. Ripe fruit and grassy undertones follow through along with lemon-spritzed caramel.
Finishes lightly tart with lingering cherry skins, fresh cut hay, and apple pulp.
I was surprised at the restrained amount of sourness and acid. Very balanced, highly refreshing and extremely quaffable.
