Capped and corked 750ml bottle: This beer pours quite hazy and gold with a quickly settling white head. The interesting aroma offers a deep yeasty character - noting overripe bananas, earth, dough and apple esthers. Creamy, sweet body and mouthfeel. The body is sugary, with butterscotch, caramel, toffee and sweet bread. Notes of nutmeg and/or cinnamon linger as well. Finishes sweet, but peppery with alcohol. I am missing the champagne dryness usually associated with the style, but this is a good Belgian anyways.

750ml bottle. thanks to dickinsonbeer for this. pours a glowing amber with very small tan head in a fantome tulip glass. nose is oaky, subtly fruity of cherries and plums, something dusty and musty in there too. flavor is initially citrusy, then it becomes more red fruity with a musty yeasty finish. a touch of sourness in there too along with a mild toffee note. a short and watery palate is what hurts this beer for me. a nice beer but i’ve had several more interesting with great depth from fantome. i’ll have to re-rate soon.

1/18/05. 750ml. Belgianshop. Golden yellow with large creamy white head. Floral citrusy hoppy aroma. NIce tart sourness with good pepper spiciness. The best Fantome so far.

dark yellow with a slight haze, lots of carbonation, nice head that’s easily activated, slightly sweet spicy aroma, hints of pepper, light dry balanced malt flavor, hint of spices and pepper, nice lemon, low on esters, nothing really distinctive, but a good drinking beer, pepper becomes very pronounced in the aroma after warming,

Pours a one finger light tan head that goes quickly to a ring leaving some lace. Cloudy amber color with some yeast left in bottle. Medium carbonation and medium bodied. Yeasty/hoppy nose. Flavor is mild spice and woody herbs. Clean finish. $18.00 for a 750ml corked bottle from Ebenezer’s Restaurant and Pub Lovell, ME.

750 bottle shared at columbus 8 - Pours amber with a short white head. Aromas of bread, yeast, some spice, tartness, and a twist of lemon. Flavor is yeasty as well with a good light flavor of some corriander blended in. I get some tartness that almost seems like brett to me... Soft carbonation with a nice smooth mouthfeel.

C-Bus 8 - Bottle: Pours a clear orange gold with a white head. Aroma, tart, lemons, some funky yeasty notes. Flavor, lemon, bready, some tartness, yeasty with some light spicing. Pretty mild for a fantome. Good stuff though.

Sampled at 7/17/07 STL beer gathering. Thanks to Sneagrams3 for providing this fantastic beer. Pours bright gold with a white head. The aroma is rich and malt with earth and caramel. It is fairly dry with a touch of sweetness, very grainy with wild yeast and some citric traits. Medium body with lots of graininess and moderate semi-sharp carbonation. The flavor starts with lots of wild yeast and graininess, some citrus, mint, hibiscus and light nuttiness. The finish adds some peppery spice and sharp graininess along with great yeastiness. Thumbs up for this fine saison.
