Not too sure of the vintage, but it was at least three years old. Got the dregs of the bottle. Lucky me! Murky banana golden hue. Clinging white layer of thick head. Musty earthy aromas. Bready orange aromas. Full bodied and blasting effervescence. Short lived smooth malty body. Bitter acidic finish. This is such a stellar brewery! Great Saison! Aroma is quite sour with some funky yeast also discernable. Taste is a mix between sourness and some oak as well as some light funky yeast and it finished on some dry notes. Body is full with some great carbonation. Another interesting experiment from this brewer which doesn’t meet all my expectation (a bit too dry and more funk would have improve this beer) but it is still enjoyable and wouldn’t mind having another go at. Creamy orange, it was opaque and had a bit of sediment, but not enough to gross me out. My glass had a thin ring of lacing, from afar it looked more like a lambic.
Really interesting aroma of fruits, mainly mangoes and peaches canned in syrup. Just the perfect amount of cork character and light funk to give it an aura of mystery.
Perfectly smooth carbonation, tastes like a melon ball wraped with a piece of prociutto and topped with cracked pepper. It was that combination of fruity refreshment, peppery finish and salty, dry and dusty aftertaste that makes me fall in love with this strange Beer style over and over again. Aggressive nose of citric funk. I love it. Taste is very funky and very acidic. Really full body filled with crunchy toasted grains, orange peels, herbal spices. There’s also some fruity notes and some citrusy hops in there but overall it is the intense funky tartness that dominates the taste. Acidity level that rivals that of many lambics. Very dry and intense wild beer that ends-up feeling like a cross between a Saison and a Gueuze. A truly unique beer, wilder than a sailor on shore leave. JB175 (1664), Bucks County, Pennsylvania, USA

Earthy, sour aroma with hints of vinous fruits, wood, yeast, and bread. Taste is sour, but not excessively tart. Lots of earthy-wooden malts, some yeast, and some light grapes as well. Smooth with a pleasant finish. Nice stuff. Its taken me way to long to get in to Fantome beers, but I’m glad I finally tried one - now for the others on deck. sunevdj (1786), Copenhagen OE, Denmark

Smells woody and sour. Light sweetness with a moderate acidicness ("acidicness", is that even a word?) Average malt aromas of straw and cereal. Some wood and resin too. Average earthyness. All with a sugary backbone. Very nice indeed.
