Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

750ml from Knightly Spirits. Pours caramel colored with a thick white head...i mean thick! Aroma is grass, honey, and caramel malts. Flavor is florals, vinegar, grapefruit, lemon...quite champagney...but good. Medium, sticky mouthfeel with a sour puckering effect. Overall...I really like this beer...I like saison but theyre not my favorte by any means...but this was good...happy to have my first saison brew and thanks to the guys at Knightly for hooking me up!

Pours a flat yellowy-peach with little fetuses floating throughout it. Nose is peaches, herbs, bark, lemon peel. Taste is heavily floral with a bizarre fruity juicy syrupy finish.

Cloudy dark orange color with a small fluffy dense head. Aroma is floral, sweet and fruity. Flavor is sweet, fruity, slightly sour, lemon, juicy. Really delicious.

750 ml. Hazy, deep golden body. No head whatsoever because there is no carbonation to speak of which is disappointing right out of the blocks. The aroma has notes of grass, lemon, toasted grain, leather, cobwebs. The flavor is moderately sweet, moderately acidic and lightly bitter. The finish is lightly sweet, moderately bitter, moderately to heavily acidic. Medium body with a thick, smooth texture, no carbonation. Tastes like very sour orange juice with barnyard and flower flavors. Badly balanced compared to classic saisons. The lack of carbonation is a major flaw. Very disappointing especially considering how much this cost.

Bottle from Sam’s in Durham. Pours hazy dark gold with amber tint. Nice head, if small. Dandelions, citrus, some hops, funky yeast (but mild for Fantome, perhaps). Slight lemony-cherry sour notes as well. Spices are there but not overpowering at all... maybe a touch of something cinnamon-like? Light, slick palate. This was less challenging than I thought it might be, but more delicious. Really good.

750ml from Sam’s, Durham. First of all, I actually think I pissed less than with other beers. Natural diuretic, my ass. That said, this is a Fantome beer, and as such it’s weird and rather awesome. Deep, darkish golden pour with big bubbles, minimal head. Like daknole, I smell the flowers a mile away. Citrus, profound yeast, and flora in the nose, with a touch of mustard seed and weirdly elusive spices. Full mouthfeel, but the flavor is less tart than I’d have expected. While still funky and yeasty enough to rank with M. Prignon’s other offerings, the sharp flavors of chewed flowers (c’mon, we’ve all been there) blends really wwell with the spice and yeast. Finish is lengthy and more refreshing than expected. Very tasty.

A real treat from JW77. Pours a cloudy orange. Aroma is lemony, funky, earthy, and I swear I smell dandelions. Flavor is delicious! I can taste the damned flowers! Along with wet earth, lemon notes, yeast, and doughy notes. This was awesome!!

750mL bottle poured into a tulip. A vigorous pour produces a slightly hazy golden orange body and a small head made up of big bubbles that cling to the side as a collar on the way down. The aroma is light and floral with plenty of grassy notes, citrus hops and maybe a hint of the dandelions. There is an overall herbal and floral character to the aroma. The taste has a surprisingly tart kick up that’s an interesting combination of musty barnyard and lemons. There’s some toasted bread in the background as well as some floral and herbal notes, maybe dandelion, but I’m not exactly sure what that would taste like anyway. The mouthfeel is very slick with extremely low carbonation and a bit sweet on the palate. I was actually surprised at how little carbonation there was on this one. This is a decent beer from Fantome but definitely not one of my favorites. I honestly think the mouthfeel holds this one back for me and a slightly more spritzy feel would make this much better.
