Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

750 ml bottle courtesy of Secret Santa, Summer 2007. Shared with after4ever and hogfodder on 3/20/08. Pour is hazy orange yellow with an off white head. Aroma of the typical Fantôme bright sour acidic (apple) fruitiness. Taste is solid balance between grainy maltiness and soft yeasty floral hoppiness. Soft and smooth palate. Had this with dinner and it worked really well.

Much thanks for Eclectic for this one. Pours out a hazy light copper/orange color with a moderate slightly off white head. Aroma is funky with good earthy notes, spice and some bitterness. Taste is very complex with an extremely long and lasting finish. Spice and slight bitterness at first take over, leaving you thinking....."Is that it?" Then the funky, floral flavors begin to come in. A nice spice compliments this along with some funky dried fruit and yeast notes.all as the flavors blend together to create a truly enjoyable Saison.

750. Thanks, Theisti! Murky burnished coppery dark amber. Thick white head, decent sheets of lace. Big sharp fruity, funky nose. Gorgeously restrained and managed aromatics. Nice medium fizzy body with minerally fruit sour mid-palate. Long pithy finish. Difficult to capture all the qualities that make this beer amazing, but I have definitely never tasted anything quite like it, and it is fantastic.

Courtesy jayg. Hazy golden/orange pour with creamy white lace. Light aroma of spice. A flavor of light cloviness with a hint of almost orange. Creamy filling palate with smooth carbonation. Nice semi sour beer that is very solid.

bottle 2004. pours claer copper, respectable tan head with some lacing. aroma is yeast, flowers, grain ,pepper. flavor is musky, dried fruity, spicy and peppery. full, bubbly, peppery mouth feel. not a favorite style. what am i gonna do with the rest of the bottle?

750ml bottle...... pours a a brilliant golden orange brown with a huge light orange head that eventually settled down after a little time..... aroma was initially really grassy but it then opened up with more sweet malts but maintained that earthiness..... flavors kept on the herbal side with a strong malt backbone and some orange. also some milder spice notes and just a hair of bitterness in the finish. carbonation level keeps it pretty lively in the mouth.....

In classic Fantôme fashion, this brew is insanely unique. It pours a muddy, medium brown color with a foamy, off-white head that settles to a thin, bubbly film. Aromas are very earthen, as if comprised of the most basic elements in a masterful way. Wildflowers are pervasive, as are dry grains, floral hops, caramel sweetness, and crushed herbs. It literally smells like the back yard of my Grandparents’ New Hampshire home when a gust of wind would blow in from the wildflower patches. Flavors are very dry, herbal, and well integrated. Coriander and orange peel make brief appearances amongst the floral earthiness. Soft caramel provides a subtle background, allowing the other elements to shine. Medium bodied and smooth, this one is very drinkable. This great sasion took me on a trip down memory lane, and any beer that can accomplish that is something special.

Bottle purchased at Bello Vino last March. Cloudy glowing appearance, moderately thick white head. Very floral and herbal aroma, sweetness in the background. The classic Fantome aroma. Taste very earthy, sweet and herbal, slight funky finish. Sublime and fantastic, a great saison.
