Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Pours a slightly clouded ruby brown with a decent light tan/creme head that kinda sticks around. This is one of the best looking saisons I have seen in a long time. Nose is funk and yeast. Flavor is fairly mild I think. But man at the end does the saison funk come back to kick you in the mouth for an aftertaste. It comes back and lingers. Mmmmm. Basically when I drink this I just think grass. Grass, grass, grass. Feel is standard I think. Not too thin, with a certain level of body. Drinkable indeed. Overall a fairly even saison and nothing too wild. Another solid Fantome production.

Thanks to boboski for opening this 2004 brew. Poured dirty hazy copper with minute long white head. The aroma is green, herbal, spicy, thick woods after a hard rain shower and a field of blooming flowers. The taste is just out right refreshing with herbs, flowers, tress, wood chips soaked in flower resin, sweetness, slightly tart lemon, light hop bitterness and green pine cones. Just delicious.

Appearance: starts with a loud pop of the cork, opaque rusty orange, huge cream head, lots of tiny bubbles
Aroma: big spicy aroma
Flavor: light spicy malt flavor, no bitterness other than the spices, no aparent alcohol but a bit warming, once it reaches room temperature it turns bitter weird

Bottled. Amber colour, small white head. Aroma is earthy, big malts and some hops. Quite sour notes also. Flavour is very sour fruits, earth, yeast and some hops. Very palatetickling thing.

04 bottle courtesy of boboski: pours cooper orange with a white head. aroma comes thru as fresh green leaves and flowers. some malt but light, and a touch of yeast. flavour is so smooth annd quite light. some green leaf and flower as the aroma. just a bit of a bitter finish on the end and also i get lemon like citrus. so refreshing. as it warms up i get wildflower honey in the taste and aroma.

Courtesy of boboski, what a way to start a tasting. I have been eagerly anticipating this beer. Pours a cloudy deep golden color. Aroma is drawing me in. Citrusy, herbaceous, hoppy, grassy and floral. It takes me to a field in Flanders. The flavor is a caucaphony of flavors dancing ever so gracefully, hitting every mark as expected. Good Lord man, I need more of this stuff.

Pours a slightly yeasty, copper color with a small white head. Funky citric aroma. Some acidity, orange peel, spices, and mild hops. The taste is slightly funky as well. Alot of sour citrus flavors, spices, yeast, and a slight bitterness. I like the flavor, it was pretty balanced. Nothing was really overpowering of the other. Kind of a subdued mouthfeel, more easy drinking and refreshing. Alot going on in the flavor, but no overwhelming flavors so you get the full experience.
